Happy 2020! How is the New Year treating you so far? I am just taking down the holiday decorations this weekend. Next week will be the first full week back to a normal schedule, so I am doing some meal planning to make it go smoother. I am participating in Veganuary, so menu planning is essential! I have been using the Vegan Breakfast Recipes and Vegan Lunch Recipes that I compiled from my favorite food bloggers in 2 prior posts. They have been very helpful, so naturally, I had to create a post including 31 Delicious Vegan Dinner Ideas!

What is Veganuary?
If you missed my previous posts, here is what I shared about Veganuary. Initially I thought it was just a catchy term created somewhere out in cyberspace. However, after I did a bit of research, I discovered the real origin of it. Veganuary is a UK based nonprofit organization that started in 2014. It is a crowdfunded campaign that encourages people to eat vegan for the month of January. Participants are able to sign up online for the event and receive helpful tips and information. Veganuary participants have doubled since it's inception in 2014.
