Happy New Year! I can’t believe it is 2019 already…the last year was quite a whirlwind. As much as I enjoy the holidays, I am ready to get back into a more normal routine. This routine includes eating healthy family dinners again! The Christmas season definitely left little time for our typical healthy meals each night. A goal for the year ahead is to cut back on meat and eat more plant based meals. However, I just love using my Instant Pot, but many of my current recipes call for meat.
