Happy Monday, I hope you had a great weekend! I had a busy “Hockey Mom” weekend as my son was in a tournament and played in 5 games over the past 3 days. It made it tricky to squeeze in my triathlon training, but I got it done. I made a goal to not miss workouts so I am really trying to stick to it! Another goal I made is to serve up more plant based meals this year. In fact, I started out the month of February by challenging myself to stick to a plant based diet for 2 weeks. I knew the biggest challenge would be: “What do I make for dinner for everyone?” So, once again, I called upon my favorite bloggers for their tried and true recipes. I found a number of delicious and easy to make Vegan Family Dinner Recipes, which I wanted to share here.
Vegan Family Dinner Recipes
Starters, Sides, & Salads
Initially, I was just hunting for delicious Vegan Family Dinner Recipes to serve as the main course. However, we are a “foodie family” and I knew if I wanted to truly to stick a plant based diet for 2 weeks, it would have to include complete meals. So, these Starters, Sides, and Salads are perfect to begin any meal or have for lunch.
It is the dead of winter here in Maine, so soup is a main staple on cold nights. These vegan soup recipes really hit the the spot. They became fast favorites with the family too!
