Happy New Year! I hope you had a wonderful holiday season. Mine was a bit of a whirlwind. I did enjoy it, but I am glad it is over and I can get back to a more normal schedule. If you caught my last post, then you know I am participating in Veganuary. The vegan breakfast recipes that I compiled from my favorite bloggers has been very helpful in meal planning. So I decided to do the same thing with Vegan Lunch Recipes.

What is Veganuary?
If you missed my previous post, here is what I shared about Veganuary. Initially I thought it was just a catchy term created somewhere out in cyberspace. However, after I did a bit of research, I discovered the real origin of it. Veganuary is a UK based nonprofit organization that started in 2014. It is a crowdfunded campaign that encourages people to eat vegan for the month of January. Participants are able to sign up online for the event and receive helpful tips and information. Veganuary participants have doubled since it’s inception in 2014.
