The holiday season is in full swing, which means baking Christmas cookies, attending parties and decorating for Christmas! I just love this time of year. Although, it does make life busy, which means time is short for a preparing a healthy breakfast or snack. This is when I like to leave the blender on the counter 24/7 to whip up delicious and nutrient dense smoothies like this Strawberry Banana Smoothie Bowl.

We are in the midst of a giant snowstorm here in Maine today. So, the kids are home from school, which allowed for a little extra time this morning. However, after indulging in the Thanksgiving goodies last week. I decided to make everyone strawberry banana smoothie bowls for breakfast this morning. In the holiday spirit, I added some fancy decorations to the top so they had a Christmas-y vibe. They were a huge hit!

What is in the Strawberry Banana Smoothie Bowl?
There are just 12 ingredients in the strawberry banana smoothie bowl including the toppings:
- Frozen Banana
- Frozen Strawberries
- Mangoes
- Baby Spinach
- Acaí Powder
- Plain Greek Yogurt
- Maple Syrup
- Almond Milk
- Kiwi Fruit
- Chia Seeds
- Pomegranate Seeds
- Shredded Coconut

What is Acaí?
The acaí berry is a dark purple fruit that is the size of a grape. It grows on the acaí palm trees in the Amazon rainforest in Brazil. These delicious berries contain powerful antioxidants, fiber, and heart healthy fats which is why they are considered to be a superfood. They are a great addition to a smoothie or smoothie bowl. In this recipe, I use the acaí powder. However, if you can not find this ingredient, it is perfectly fine to omit it.

How do I make the Strawberry Banana Smoothie Bowl?
It is very easy to make in just a few simple steps. First, measure out the almond milk and set aside. Then, add all the smoothie ingredients to the blender.

Then, add about half the almond milk.

Blend until smooth and add the remaining almond milk if necessary to reach desired consistency. Pour into bowl and keep refrigerated.
How do I prepare the decorative toppings for the smoothie bowl?
Essentially, you prepare another small batch of a smoothie and place it in a squeeze bottle to make the pretty designs on top of the smoothie. Here is what you will need:
- Greek Yogurt
- Baby Spinach
- Maple Syrup
- Kiwi Slices
- Strawberry
- Chia Seeds or Bananas (for thickening)
Place all of these ingredients into blender and blend until smooth. Add additional spinach to reach desired color of green.

Then, transfer ingredients to a squeeze bottle to decorate top of smoothie. Since it is the holidays, I did a Christmas themed design. However, your imagination is the limit on how you design the top of the smoothie bowl with the thickened ingredients in the squeeze bottles! The picture below is a Christmas tree that I made for my daughter's smoothie bowl.

The one I created for myself has the green swirls. Then, I placed kiwi slices, coconut, chia seeds and pomegranate seeds on the outer edge.

Once you have prepared your smoothie bowl, designed the top and added the toppings, it is time to enjoy it! The strawberry banana smoothie bowls can be stored for a brief period of time in the refrigerator. However, after an hour or so, the fruit may start to sink and the design will run. It is best to eat these beautiful and delicious bowls immediately after preparation.
I'm on a plant-based diet, what can I substitute for the Greek yogurt?
I used Greek yogurt because that is what I had in the refrigerator! This can easily be turned into a plant-based smoothie bowl by using almond or coconut milk yogurt.

What other toppings can I use on the Strawberry Banana Smoothie Bowl?
Just about anything! Some ideas include: raspberries, granola, blackberries, dried fruit, and nuts. The thickened smoothie could also be changed up to a different color by using other ingredients. For example, if you wanted to create an orange design, omit the spinach and add frozen mango chunks. A purple design? Use frozen blueberries.

Ingredients for main smoothie:
- 1 whole frozen banana
- 1 cup frozen strawberries
- ½ cup frozen mangoes
- Small handful of baby spinach
- 1 teaspoon acaí powder
- ¼ cup plain Greek yogurt
- 2 tablespoon maple syrup
- ¼ cup almond milk
Ingredients for small batch of smoothie for making decorations:
- 2 tablespoon plain Greek yogurt
- Handful spinach
- 2 teaspoon maple syrup
- 2-3 slices kiwi
- 1 strawberry
- Chia seeds or banana for thickening optional
Toppings:
- Chia seeds
- Kiwi cut into quarters
- Pomegranate arils
- Shredded coconut
Instructions
- For Smoothie Bowl:
- Measure almond milk and set aside.
- In a blender, add the smoothie bowl ingredients: 1 whole frozen banana, 1 cup frozen strawberries, ½ cup frozen mangoes, small handful of spinach, 1 teaspoon acaí powder, ¼ cup non-fat plain yogurt, and 2 tablespoon maple syrup
- Add half of the almond milk and blend until smooth.
- Add more almond milk as needed to reach desired consistency.
- Transfer to a bowl.
- For Small Batch Smoothie:
- In a small blender, put in ingredients for the small smoothie batch: 2 tablespoon Greek yogurt, small handful spinach, 2 teaspoon maple syrup, 2-3 slices kiwi, and 1 strawberry.
- Blend until smooth and the color of green you desire.
- Add 1 teaspoon chia seeds or 1 tablespoon banana to thicken.
- Add more spinach for a darker green color.
- Transfer the small smoothie batch to a squeeze bottle.
- Squeeze the green smoothie onto the main smoothie bowl to create a custom shape or beautiful design.
- Add kiwi, chia seeds, and shredded coconut to the outer edge of the bowl.
- Top your design off with pomegranate seeds for some added color and flavor.
- Enjoy immediately!
