How Do I Make Mini Cauliflower Pizzas?

Step One: Prepare the cauliflower

Before making your mini pizzas, you must take a few minutes to prepare your cauliflower. Start by cutting the cauliflower head into small pieces and removing the green stem. Add the florets to a food processor and pulse the cauliflower until it resembles small crumbs.

Transfer the cauliflower to a kitchen towel or cheesecloth. Twist the cloth around the cauliflower until water starts to come out. Continue squeezing the cloth until no more water drips from the cauliflower.

Step Two: Make the cauliflower pizza crust

Transfer the strained cauliflower to a large bowl. After that, add the eggs, flour, and parmesan cheese. Season with salt and pepper, then mix all the ingredients until they combine well.

Step Three: Bake the pizza crust

Preheat the air fryer to 400 degrees. Cut a piece of parchment paper to fit the air fryer basket and lay it on a flat surface. Scoop two tablespoons of dough mixture out and roll it into a ball. Flatten the dough in a thin layer on the parchment paper. Continue making mini pizza crusts, adding as many crusts as you can fit on the parchment paper.

Transfer the parchment paper with the crust into the hot basket when the air fryer is heated. Bake the crust at 400 degrees for 8 minutes, then flip the pizza and cook an additional 3 to 4 minutes.

Ingredients

  • 1 head cauliflower
  • 2 eggs
  • ¼ cup all-purpose flour or almond flour
  • ½ cup grated parmesan cheese
  • 1 tsp salt
  • freshly ground black pepper
  • 2 cups mozzarella cheese shredded
  • ½ pizza sauce
  • 8 ounces pepperonis

Instructions

  • Cut your cauliflower head into small pieces (remove green stem).
  • Add to a food processor. Pulse the cauliflower until it resembles small crumbs.
  • Add all the cauliflower crumbs to a kitchen towel or cheesecloth. Twist the cloth until water from the cauliflower comes out. Continue to squeeze until no more water comes out.
  • Add the cauliflower to a large bowl. Add in your eggs, flour, parmesan cheese, salt, and pepper. Mix.
  • Preheat your air fryer to 400 degrees. You do this by setting your air fryer to the temperature for about 5 minutes.
  • Cut out parchment paper the size of your Air Fryer. (This is not necessary, but it does help in the transfer of the pizza to the air fryer. You can also just use a spatula to transfer.) Take 2 tbsp of your cauliflower pizza into the palm of your hand. Roll in a ball, and then flatten into a thin layer. Add as many pizzas as you can to your parchment paper. My air fryer will fit 4 at a time.
  • Cook at 400 degrees for 8 minutes. Flip the pizza over and cook at 400 degrees for 3-4 minutes (depending on your preference of softness to crunchiness).
  • Flip the pizza back over again where the first side is on the bottom again. Add your pizza sauce, cheese, and 3 pepperonis’. Cook again at 360 degrees for 4 minutes.
  • Remove with a spatula to your plate or serving dish. Top with parsley, oregano, parmesan cheese, etc. and enjoy!
