It has been a very cold Spring here in Maine, but we are starting to have some sporadic "summer like" days. Yesterday was one of them and I spent as much time as I could outside enjoying it. I did some work in the garden and took the dogs for a long walk while soaking up the sun.
Then, I went for a run and I was reminded of the one reason I do not like Summer. I struggle greatly exercising in the heat. Case in point, when I was on the brink of heat stroke at Ironman Chattanooga and ended up with my first ever DNF...ugh!
Anyway, I kept my run short. Then, I came home and decided to whip up a smoothie. Our refrigerator was a little bare, so I had to get creative. So, I came up with this Healthy Carrot Orange Smoothie. It was so refreshing and delicious!

Why is this Carrot Orange Smoothie considered healthy?
There are just a few ingredients in this delicious smoothie, but they are healthy ones that can give your immune system a boost! Check out the benefits:
Carrots: This popular root vegetable is known to be good for vision due to the high amount of Vitamin A it contains. It has a number of other healthy benefits too! If you love carrots, give my Healthy Carrot Apple Ginger Soup a try!
Oranges: Some benefits from this popular citrus fruit include it being high in Vitamin C and it can help prevent skin damage. I love adding oranges to smoothies like this Inflammation Fighting Orange Smoothie.
Flax seeds: These seeds are high in fiber and high in Omega-3 Fats. I try to add in them into recipes whenever I can, they are a perfect addition in these Healthy No-Bake Peanut Butter Crunch Balls.
Cinnamon: This spice is high in antioxidants and it has anti-inflammatory properties. It may also help to fight bacterial and fungal infections. It is a great addition to a number of recipes like Banana Cinnamon Smoothie, Cinnamon Banana Apple Smoothie Bowl and a favorite dessert Cinnamon Apple Pumpkin Cake.

How do I make the Healthy Smoothie?
My favorite thing about most smoothie recipes is there is just one simple step! Just toss everything in the blender and blend until well combined and smooth. Then, pour it into your favorite glass and ENJOY! That is all there is to it!

Can I store the Carrot Orange Smoothie?
Yes, it can be stored in the refrigerator for up to 3 days. It is best to put it back in the blender to mix it back up before serving it.
What kind of milk can I use in the smoothie?
I used plain whole milk in the smoothie shown here because that is what I had on hand. However, it is just as delicious with coconut, almond or oat milk.
Can I add anything else to the smoothie?
Like any smoothie recipe, this is versatile! Add whatever else you enjoy, like spinach, banana, strawberries, raspberries, etc. Sometimes, I add in a teaspoon of vanilla for extra flavor. My kids enjoy making it with vanilla yogurt instead of milk.
