What do I need to make the Carrot Cookies with Orange Glaze?

You will need twelve ingredients for this cookie recipe. The first thing you will need to do before getting started is to cook and mash the carrots. To do this, peel 3 large carrots and cut them up into medium sized pieces. Boil them until soft and tender, then mash them up with a potato masher until they are smooth.

How do I make the cookies?

There are just a few simple steps to making this easy dessert recipe. Here is what you will need to do.

Step 1: Beat butter and sugar together

Preheat oven to 350 degrees Fahrenheit. With a mixer, beat butter and sugar until crumbly.

Step 2: Add carrots, egg, vanilla and orange zest

Next, add in the carrots, egg, vanilla and orange zest to the sugar mixture. Beat with a hand mixer until well mixed.

Step 3: Add in dry ingredients

Sift together the flour, salt and baking powder. Then, gradually add to dough and mix until well blended.

Step 4: Drop on cookie sheet and bake

Drop by spoonfuls onto a cookie sheet lined with parchment paper. Bake at 350 degrees for 15 minutes until golden. 

*Pro Tip: For this soft cookie dough, it is best to use a spoon to drop the cookies onto the sheet instead of a cookie scoop

Step 5: Make the glaze

Make the glaze while the cookies are cooling by combining hot orange juice and powdered sugar.  Stir until all lumps are smooth, then stir in the orange zest. Drizzle glaze on top of cooled cookies and add extra orange zest for garnish (if desired).

Notes

To Cook & Mash Carrots:  Peel 3 large carrots and cut them up into medium sized pieces. Boil them until soft and tender, then mash them up with a potato masher until they are smooth. 
*These soft cookies are not super sweet and go well with coffee and are also good for a quick breakfast.
*This soft dough doesn’t work well with a cookie scoop. It works better dropped from a spoon.
