Ingredients

For Cookies:

For Orange Glaze:

  • ¼ cup Orange Juice hot (heat up in microwave for 15-20 seconds or heat on stove top over low heat)
  • 2 cups Powdered Sugar
  • Zest of 1 large or 2 small oranges 1 teaspoon used in cookie dough

Instructions

  • Preheat oven to 350 degrees F.
  • With a mixer, beat butter and sugar until crumbly.
    Flour and butter in glass bowl with blender beating ingredients together.
  • Add carrots, egg, vanilla and orange zest to sugar mixture and beat until well mixed.
    Mashed carrots, flour, sugar and eggs in a large glass bowl.
  • Sift flour, salt and baking powder. Then, gradually add to dough, mixing well.

  • Drop by spoonfuls onto cookie sheet.

  • Bake 15 minutes until golden.
  • Make glaze while cookies are cooling by combining hot orange juice and powdered sugar. Stir until all lumps are smooth, then stir in zest.

  • Drizzle glaze on top of cooled cookies.
  • Sprinkle with additional orange zest for garnish (if desired).

Notes

To Cook & Mash Carrots:  Peel 3 large carrots and cut them up into medium sized pieces. Boil them until soft and tender, then mash them up with a potato masher until they are smooth. 
*These soft cookies are not super sweet and go well with coffee and are also good for a quick breakfast.
*This soft dough doesn’t work well with a cookie scoop. It works better dropped from a spoon.
