What Ingredients do I need for Funfetti Cookies?

To make these super easy cookies, you need just four simple ingredients:

  • Gluten Free Funfetti Cake Mix: The reason these cookies are so easy to make is that they use cake mix as their base! And since funfetti cake mix has sprinkles in it, you’ll have the added bonus of a pop of color in your cake mix without adding in another ingredient.
  • Eggs: While your cake mix box probably lists eggs as one of the ingredients you will need to make cake, the number of eggs you need to turn your cake mix into cookies is different. Ignore the instructions on the box and follow the recipe below instead.
  • Oil: Again, your cake mix box will tell you to use oil when making the gluten free cake. However, the amount of oil needed for cookies is slightly less than the amount you will need for the cake. Keep reading to get the exact measurements needed for this super easy cookie recipe.
  • Mini M&Ms:  While your funfetti cake mix is packed with colorful sprinkles, sometimes you just need a little more color in your cookies! Make your cookies extra special and add some chocolate to the mix with the help of these chocolate candies.

How do I Make the Gluten Free Funfetti Cookies?

While these simple cookies are made using cake mix, you won’t be making them the same way you make a cake. Instead of following the directions on the package of your gluten free cake mix, you are going to go in a different direction. So, simply pour the mix into a bowl and throw away the box. You won’t need the instructions on the cake mix box to make these quick and easy cookies.

Step 1: Mix the Cake Mix, Eggs and Oil together

After adding the cake mix to your bowl, add the eggs and oil to the mixture. Then, use a spoon to stir the ingredients together. There’s no need to use a mixer to blend the ingredients. In fact, the dough will be thick, so it’s a good idea to stir with a spoon to ensure all the ingredients get incorporated.

Step 2: Add the mini M&Ms

After the cookie dough is mixed, you can add in your M&Ms. Pour them into the bowl and stir until they’re thoroughly mixed into the dough.

Step 3: Roll Funfetti Cookie dough into balls

Next, use a tablespoon or cookie scoop to scoop out balls of dough. Roll the dough between your hands to create an even ball, then place the ball on a lined baking sheet. Continue rolling until the sheet is full, then press each cookie down slightly with the palm of your hand.

Step 4: Bake the Gluten Free Funfetti Cookies

Bake your cookies for 10 to 15 minutes. The cookies are ready to come out of the oven when the edges are just beginning to brown, but the centers are still slightly soft. Give the cookies time to cool slightly on the baking sheet. When they have hardened, you can transfer them to a wire cooling rack to cool completely before serving.

Gluten Free Funfetti Cookie Substitutions

Finding the right gluten free ingredients for a recipe can sometimes be a challenge. That’s why you may need to make some substitutions to a recipe if you can’t find what you need. These replacements will help make this simple recipe when you’re mixing some of the ingredients.

  • Replace the funfetti cake mix: If you aren’t able to find funfetti cake mix in your grocery store, don’t worry! You can easily replace the cake mix with another flavor. Typically, gluten free yellow cake mix is readily available in most stores, which makes it the perfect replacement for funfetti cake mix. To give your cookies the look of funfetti cake, just add sprinkles. Use yellow cake mix, then add around 1/3 cup of rainbow sprinkles to the mix. Continue with the rest of the recipe as written.
  • Substitute the mini M&Ms: Can’t find mini M&Ms at your store? Don’t worry! You can leave the candy out of the recipe altogether. Or simply replace the mini version with the full-sized candy. Chocolate chips would also be a great addition to these easy cookies.
  • Replace the oil: Are you out of oil? The oil in the recipe can be replaced with melted butter, but the cookies will have a slightly different texture. To make the replacement, simply melt ½ cup of unsalted butter, which is one stick. Add the melted butter to the batter as directed. When baking, you may notice the cookies becoming flatter or spreading more than they wood with oil, but they will still taste amazing!

Ingredients

  • 1 box gluten free funfetti cake mix Pillsbury
  • 2 eggs
  • ½ cup oil
  • ½ cup mini M&Ms

Instructions

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • In a large bowl, stir together the cake mix, eggs, and oil until well combined.
  • Add the M&Ms and stir to combine.
  • Use a tablespoon to scoop out the dough and roll it into a ball. Place the ball on the prepared baking sheet and press down slightly.
