I love to grow fresh cabbage in my garden. However, other than traditional recipes like Classic Creamy Coleslaw  or Corned Beef and Cabbage, I don’t always have great ways to serve it. I was brainstorming the other night on what to serve up as a side dish with Jalapeno Turkey Burgers and I was going to use an old standby of Roasted Broccoli and Sweet Potatoes in Coconut Oil.

Then, it hit me… Why not try roasting cabbage? I actually can’t believe I had never tried it before because roasting vegetables is my favorite way to serve them! I came up with a quick and easy recipe that even the kids love! It is actually so tasty that I made it twice this week!

What do I need to make the Roasted Cabbage and Yogurt Tartar Sauce?

This recipe is very simple to prepare, but packed with flavor! Here is what you will need to make the Roasted Cabbage:

  • Cabbage
  • Lemons
  • Extra Virgin Olive Oil
  • Lemon Juice
  • Cayenne Pepper
  • Sea Salt
  • Black Pepper
  • Pomegranate Seeds (optional)
  • Plain Greek Yogurt
  • Pickles
  • Garlic

How do I make the Roasted Cabbage with Yogurt Tartar Sauce?

There are just a few simple steps to make this healthy and delicious cabbage recipe with Yogurt Tartar Sauce.

Step 1: Prepare the Yogurt Tartar Sauce

Start off by preparing the Yogurt Tartar Sauce. In a small bowl, mix together plain Greek yogurt, pickles, minced garlic, lemon juice, olive oil, black pepper and sea salt. Adjust salt, lemon juice and pepper if needed. Place Tartar Sauce in the refrigerator to allow flavors to develop while the cabbage is prepared.

 

Step 2: Preheat oven and prepare the cabbage

Preheat the oven to 400 degrees Fahrenheit. Then, line a baking sheet with parchment paper and set it aside. Next, take half a head of green cabbage and slice it into six wedges.

Step 3: Dress the Cabbage 

Whisk together the oil, lemon juice, cayenne pepper, salt and pepper in a small bowl. Place cabbage wedges on the baking sheet lined with parchment paper and tuck in lemon slices around the cabbage. Brush the oil mixture onto the cabbage wedges on the front and back using a basting brush. 

Step 4: Roast the Cabbage

Place the cabbage on center rack in the oven and roast for 20 minutes on one side. Then, turn the cabbage over and roast for an additional 20 minutes on the other side, until tender. Remove from oven and serve warm with Yogurt Tartar Sauce. Sprinkle with pomegranate seeds, if desired.

Can I store the roasted cabbage?

Yes, this actually stores well in the refrigerator in a covered container for up to 3 days. If you anticipate that you will have leftovers, only put the yogurt tartar sauce on what you are serving, as the sauce should be stored in a separate container.

How do I reheat the cabbage?

It can easily be reheated in the microwave or on low in the oven. Drizzle the tartar sauce on the cabbage wedges after reheating.

Do I need to use the pomegranate seeds?

No, this is up to you! I had them on hand and thought they would make a beautiful garnish and add color to the dish. I enjoy the contrast in flavors as well. However, they are not necessary!

Roasted Cabbage

Tartar Yogurt Sauce

  • 1 cup plain Greek yogurt
  • 4 pickles chopped
  • 1 garlic clove minced
  • 2 tablespoons lemon juice more if needed depending on your taste
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Instructions

For Yogurt Tartar Sauce:

  • In a small bowl, mix together plain Greek yogurt, pickles, minced garlic, lemon juice, olive oil, black pepper and sea salt.
  • Adjust salt, lemon juice and pepper if needed.
  • Place Tartar Sauce in the refrigerator to allow flavors to develop while the cabbage is prepared.

For Roasted Cabbage:

  • Preheat the oven to 400 Fahrenheit. Prepare a baking sheet with parchment paper and set aside.
  • Whisk together oil, lemon juice, cayenne peper, salt and pepper in a small bowl.
  • Slice cabbage into 6 wedges and arrange them with lemon quarters on the parchment paper.
  • Brush each side of cabbage wedges with oil mix.
  • Place on center rack in the oven and bake for 20 minutes.
  • Then, turn each wedge on the other side and bake for additional 20 minutes.
  • Remove from oven and poon tartar sauce over roasted cabbage wedges, sprinkle with pomegranate seeds (if desired), serve and enjoy!
