Preheat the oven to 400 Fahrenheit. Prepare a baking sheet with parchment paper and set aside.
Whisk together oil, lemon juice, cayenne peper, salt and pepper in a small bowl.
Slice cabbage into 6 wedges and arrange them with lemon quarters on the parchment paper.
Brush each side of cabbage wedges with oil mix.
Place on center rack in the oven and bake for 20 minutes.
Then, turn each wedge on the other side and bake for additional 20 minutes.
Remove from oven and poon tartar sauce over roasted cabbage wedges, sprinkle with pomegranate seeds (if desired), serve and enjoy!
