Roasted Cabbage with Yogurt Tartar Sauce

Sliced cabbage is brushed with olive oil, lemon juice and seasoning, then roasted until tender.  Warm out of the oven, it is dressed with a scrumptious tartar sauce made with Greek yogurt and dill pickles before serving.

Ingredients

Roasted Cabbage

Tartar Yogurt Sauce

  • 1 cup plain Greek yogurt
  • 4 pickles chopped
  • 1 garlic clove minced
  • 2 tablespoons lemon juice more if needed depending on your taste
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Instructions

For Yogurt Tartar Sauce:

  • In a small bowl, mix together plain Greek yogurt, pickles, minced garlic, lemon juice, olive oil, black pepper and sea salt.
  • Adjust salt, lemon juice and pepper if needed.
  • Place Tartar Sauce in the refrigerator to allow flavors to develop while the cabbage is prepared.

For Roasted Cabbage:

  • Preheat the oven to 400 Fahrenheit. Prepare a baking sheet with parchment paper and set aside.
  • Whisk together oil, lemon juice, cayenne peper, salt and pepper in a small bowl.
  • Slice cabbage into 6 wedges and arrange them with lemon quarters on the parchment paper.
  • Brush each side of cabbage wedges with oil mix.
  • Place on center rack in the oven and bake for 20 minutes.
  • Then, turn each wedge on the other side and bake for additional 20 minutes.
  • Remove from oven and poon tartar sauce over roasted cabbage wedges, sprinkle with pomegranate seeds (if desired), serve and enjoy!
