I just love roasting vegetables in the oven. It brings out so much flavor in them.  I have tried many different vegetable combos over the years like Roasted Broccoli and Sweet Potatoes in Coconut Oil, Oven Roasted Mushroomsand Roasted Cauliflower and Brussels Sprouts.

The other night when I was looking in the refrigerator and found asparagus and carrots, it hit me that I had never roasted these 2 vegetables together.  So, of course, I had to give I a try! I think this recipe for Roasted Asparagus and Carrots with Parmesan Cheese just might be my new favorite!

As I mentioned above, this recipe is incredibly easy to make. You will need just 6 ingredients to make this tasty vegetarian dish.

How do I make the Roasted Carrots and Asparagus with Parmesan Cheese?

There are just 2 steps to make my new favorite vegetarian side dish recipe.

Step 1: Prepare the Vegetables

Preheat the oven to 375 degrees Fahrenheit. Prepare rimmed baking sheet by spraying it with cooking spray or rubbing it with olive oil, then set it aside. Next, prepare vegetables by peeling carrots and cutting lengthwise in half or quarters, depending on how large the carrots are. Cut off woody ends of asparagus. Toss together with olive oil, sea salt and black pepper, then place on prepared baking sheet.

Step 2: Roast, Add Cheese and Enjoy!

Place asparagus and carrots in the oven and bake at 375 degrees Fahrenheit for 25 to 30 minutes. Turn vegetables over once or twice while baking. I watch them and when they start to lightly brown, I remove them from the oven. After they are taken out of the oven, sprinkle Parmesan cheese on top and lightly toss again. Serve warm and enjoy!

This is a great vegetarian side dish to go along with a number of your favorite entrees or it even makes a light and healthy lunch. Here are a few recipes that you serve up with the asparagus and carrots.

Can I store the roasted asparagus and carrots?

They can be stored in a covered container in the refrigerator for up to 3 days in the refrigerator. Then, they can be reheated in the microwave or in the oven on low heat. While they can be stored, for the best taste and texture, eat the Roasted Asparagus and Carrots with Parmesan Cheese hot out of the oven.

Do I have to use Parmesan Cheese?

No, feel free to skip the cheese all together for a healthy, vegan side dish.  If you do enjoy cheese, just about any kind could be added when the vegetables come out of the oven. Some great alternatives to the Parmesan cheese are:

  • Shredded Mozzarella Cheese
  • Crumbled Feta Cheese

What variations are there to the Roasted Vegetable Recipe?

This is such a simple recipe and it can easily be added to or varied in a number of different ways. Here are a few different variations that would be tasty!

  • Nuts: For some crunch and a little more flavor, add some nuts to the vegetables. This could be done before placing the asparagus and carrots in the oven if you would like the nuts to be roasted along side the vegetables. Or, toss them in at the end along with the cheese. Walnuts, pistachios and almonds would work great!
  • Oil: I used olive oil in this simple version, but these veggies would be tasty with other oils as well. Coconut, Avocado or even Sesame oil would be fun alternatives to try. 
  • Herbs: Add your favorite dried or fresh herbs like rosemary, basil, sage or thyme
  • Dried Fruit: If you like a sweet taste, toss in some dried cranberries or raisins with the roasted vegetables after you remove them from the oven.

  • 1 bunch of asparagus
  • 4 large carrots peeled and cut lenghtwise in half or quarters, depending how large they are.

  • cup parmesan cheese shredded
