I just love roasting vegetables in the oven. It brings out so much flavor in them. I have tried many different vegetable combos over the years like Roasted Broccoli and Sweet Potatoes in Coconut Oil, Oven Roasted Mushrooms, and Roasted Cauliflower and Brussels Sprouts.

How do I make the Roasted Carrots and Asparagus with Parmesan Cheese?
There are just 2 steps to make my new favorite vegetarian side dish recipe.
Step 1: Prepare the Vegetables
Preheat the oven to 375 degrees Fahrenheit. Prepare rimmed baking sheet by spraying it with cooking spray or rubbing it with olive oil, then set it aside. Next, prepare vegetables by peeling carrots and cutting lengthwise in half or quarters, depending on how large the carrots are. Cut off woody ends of asparagus. Toss together with olive oil, sea salt and black pepper, then place on prepared baking sheet.

Step 2: Roast, Add Cheese and Enjoy!
Place asparagus and carrots in the oven and bake at 375 degrees Fahrenheit for 25 to 30 minutes. Turn vegetables over once or twice while baking. I watch them and when they start to lightly brown, I remove them from the oven. After they are taken out of the oven, sprinkle Parmesan cheese on top and lightly toss again. Serve warm and enjoy!

Roasted Asparagus and Carrots with Parmesan Cheese
Ingredients
- 1 bunch of asparagus
- 4 large carrots peeled and cut lenghtwise in half or quarters, depending how large they are.
- 3 tablespoon olive oil
- ⅓ cup parmesan cheese shredded
- sea salt to taste
- black pepper to taste
Instructions
- Preheat the oven to 375 degrees F.
- Toss asparagus and carrots with olive oil.
- Spread on a baking sheet and top with a dash of salt & pepper.
- Bake for approximately 25-30 minutes, turning with tongs once or twice while cooking.
- Remove from the oven and top with shredded parmesan cheese.
- Serve hot out of the oven and enjoy!
