Roasted Asparagus and Carrots with Parmesan Cheese

Ingredients

  • 1 bunch of asparagus
  • 4 large carrots peeled and cut lenghtwise in half or quarters, depending how large they are.
  • 3 tablespoon olive oil
  • cup parmesan cheese shredded
  • sea salt to taste
  • black pepper to taste

Instructions

  • Preheat the oven to 375 degrees F.
  • Toss asparagus and carrots with olive oil.
  • Spread on a baking sheet and top with a dash of salt & pepper.
  • Bake for approximately 25-30 minutes, turning with tongs once or twice while cooking.
  • Remove from the oven and top with shredded parmesan cheese.
  • Serve hot out of the oven and enjoy!
