We all have those hectic mornings when it’s a miracle to even make it out the door on time, let alone eat breakfast. I know I am not alone in this struggle.  Fortunately, I have the perfect solution to this common morning routine problem…OVERNIGHT OATS!! They are incredibly delicious, take seriously no time to make, and are wonderful for planning ahead of time. 

I like to make overnight oats on Sunday evenings; then we have breakfast for the week. They are super easy to prepare and everyone is more than happy to munch on them. WHAT DO I NEED TO MAKE PUMPKIN PIE OVERNIGHT OATS?

One of the biggest reasons I love healthy overnight oats so much is that they are so easy to prepare! Seven ingredients are all that is needed for this best overnight oats recipe. 

  • Oats
  • Almond Milk or Your Favorite Plant-Based Milk
  • Maple Syrup or Honey
  • Vanilla Yogurt
  • Pumpkin Puree
  • Pecans
  • Hemp Hearts

HOW DO I MAKE PUMPKIN PIE OVERNIGHT OATS?

Time for the good stuff, how to make the overnight oats. This incredible recipe is so EASY. Let’s take a look at the 2 short and simple steps.

STEP 1: PREPARE THE OATS

Place the oats, milk, and maple syrup into a mason jar. Add the lid and shake until mixed well. 

STEP 2: REFRIGERATE, EAT, AND ENJOY!

Place into the fridge overnight. When you are ready to serve, place a scoop of overnight oats into a cup, layer with pumpkin puree, and top with yogurt. Garnish with pecans and hemp hearts, if desired, and enjoy!

OVERNIGHT OATS VARIATIONS

If you are in the mood to play around with the recipe for these yummy pumpkin pie overnight oats, I have some great ideas for you. Here are some tasty variations that I think you will enjoy trying. 

  • Chocolate – Everything is better with a little bit of chocolate, right? Add in some of your favorite chocolate chips. Dark, semi-sweet, milk or even white chocolate would be great. 
  • Pumpkin Pie Spice – Sprinkle on some pumpkin pie spice before refrigerating to give it even more pumpkin flavor. 
  • Nuts – I used pecans, but you can swap them for almonds, walnuts, or even hazelnuts. 
  • Extracts – Either almond or vanilla extract would be a tasty addition. I recommend 1/2 – 1 teaspoon, depending on your preferences.

HOW LONG DO OVERNIGHT OATS LAST?

They will last in the refrigerator for up to 5 days. So, they are lovely for meal prepping, and you can enjoy them throughout the week. This saves you a lot of time in the mornings too. Plus, they are also around for a quick and easy snack as well. 

WHAT KIND OF OATS DO I NEED TO USE?

The best option is going to be old-fashioned oats. They hold up the best and don’t give you a mushy result. Steel-cut oats are another great choice, but they will have a much firmer texture.  Minute oats work as well, but they do tend to get mushy, so take that into consideration before using them.

DO YOU HAVE TO USE MASON JARS?

No, it’s not required to use mason jars if you don’t have any. You can use any kind of airtight container with a tight-fitting lid. I recommend glass jars or containers when possible, but plastic will also work. 

SHOULD I EAT OVERNIGHT OATS COLD OR HOT?

Overnight oats are delicious eaten cold or hot. I love taking them out of the refrigerator and eating them immediately. My daughter prefers to warm them up first. The best way to heat them up is in the microwave for about 30-45 seconds. Make sure to stir them well after heating them. If you do not have a microwave, you can warm them up in a small saucepan over low heat. Add one or two tablespoons of almond milk if they seem to dry out while warming them up.
