These Chocolate Covered Cherry Overnight Oats are Quick & Easy to make. They are vegetarian and can be served hot or cold. The recipe can be simply adjusted to a vegan and/or gluten-free dish as well.

Happy Friday, I hope you’re having a great week! I have been fighting a cold for several days and finally got taken down pretty hard by it Wednesday. So, I did the best thing I could, which was rest. Of course, that foiled my “I’m not going to miss any workouts” plan, but it was necessary.

Chocolate Covered Cherry Overnight Oats

I decided to take my downtime from training to do some work on the blog. As I was going through some old posts, I came across a round up style entry I had done on Healthy Breakfast Meal Prep Recipes. I love all the recipes in the post, especially the ones for Overnight Oats. It made me think what happened to Overnight Oats? They were all the rage on Pinterest for a while! Anyway, I decided I needed to make a batch. After perusing the fridge & freezer, I came up with this delicious recipe that I had to share: Chocolate Covered Cherry Overnight Oats.

Chocolate Covered Cherry Overnight Oats

Ingredients

  • 1 Cup Chocolate Almond Milk (or any kind of chocolate milk)
  • 1/2 Cup Rolled Oats (may use gluten-free)
  • 1/2 Cup Frozen Cherries
  • 1 Tbsp Chia Seeds
  • 1 Tbsp Dark Chocolate Chips
  • 1 Tbsp Coconut
  • For Toppings:
  • Coconut
  • Dark Chocolate Chips
  • Nuts
  • Cherries

Instructions

  1. Combine all ingredients in a mason jar, seal and refrigerate overnight or for at least 4 hours
  2. Remove lid and stir. They can be heated up or eaten cold.
  3. Add toppings of your choice and enjoy!

This recipe is so quick & easy to make! I love making the oats in mason jars to be “fancy”. However, they can be prepared in any kind of container. The cherries can be substituted with just about any kind of fruit you might desire! I enjoy making a “Chocolate Covered Strawberry” version as well. They make a delicious and filling post-workout meal, breakfast, or lunch, and can be served hot or cold.
