It’s hard to believe that we are over halfway through January! Believe it or not, I still have a few Christmas decorations that I need to take down. Life has been busy! However, I have stayed true to my goal of following a plant based diet for the month of January, aka Veganuary. It has been fun trying out and creating new recipes. One thing I made this week that was so simple, but packed with flavor is these Easy  Roasted Buffalo Chickpeas. They make a terrific snack and will be a fantastic healthy, vegetarian treat to take to a Super Bowl Party.

Why use Chickpeas?

I love using chickpeas in a variety of recipes like Vegetarian Chicken Salad. They are an excellent source of plant based protein and they are packed with other nutrients as well. Chickpeas take on other flavors well and make a great alternative to meat in recipes for people following a vegan or vegetarian diet. 

What is in the Roasted Buffalo Chickpeas

This spicy snack is super easy to make and contains just eight ingredients:

How do I make the Easy Roasted Buffalo Chickpeas?

There are just a few steps to make this yummy snack. Start by preheating the oven to be 425 degrees. Prepare a cookie sheet with parchment paper or nonstick foil. Then, pour chickpeas into a colander and rinse with cool water.

Next, spread the chickpeas onto paper towels to dry them so the seasoning will stick. Place them in a medium bowl and add the hot sauce, olive oil, paprika, garlic powder and cayenne pepper. Toss them until the chickpeas are well coated with seasonings.

Spread the the chickpeas into a single layer on prepared baking sheet. Sprinkle with salt and pepper to taste.

Then, pop them into the oven and bake until crisp. This will take about 40 minutes, but keep an eye on them as they tend to go from crisp to burnt quickly! Once they are crisp, remove from oven and cool for about 10 minutes in pan before serving.

How do I store the Buffalo Chickpeas?

They can be stored in an airtight container at room temperature for 5 to 7 days. 

How spicy are the Chickpeas?

The level of spice can be adjusted depending on how much you like it. If you like a mild spice, use less cayenne pepper. However, if you like to really heat it up, add more! 

Are there other ways I can use the Buffalo Chickpeas?

This tasty plant based snack is delicious all on it’s own. However, they are so versatile and can be added to other recipes. I love them as a topping on soups or salads!

Ingredients

  • 2 15 ounce cans garbanzo beans (chickpeas), drained and rinsed
  • 3 Tablespoons hot sauce I use Louisiana brand
  • 2 Tablespoons olive oil
  • 1 Tablespoon paprika
  • 2 teaspoons garlic powder
  • 1/4 teaspoon to 1/2 teaspoon cayenne pepper
  • Salt and pepper

Instructions

  • Preheat oven to 425.
  • Prepare a cookie sheet with parchment paper or nonstick foil.
  • Pour chickpeas into a colander and rinse with water.
  • Then, spread chickpeas onto papertowels to dry so the seasoning will stick.
  • Place chickpeas in a medium bowl.
  • Add the hot sauce, olive oil, paprika, garlic powder and cayenne pepper. Toss to coat chickpeas.
  • Place in a single layer on the prepared cookie sheet.
  • Liberally salt and pepper before placing in the oven.
  • Bake until crisp, about 40 minutes, stirring once halfway through.
  • Remove from the oven.
  • Cool on baking sheet and Enjoy!
  • Store in air-tight container at room temperature.

Notes

*Keep a close eye on these during the last 10 minutes as they can quickly go from crisp to burnt!
**These are particularly pungent as they are cooking. When you open the oven to stir at the halfway you’re gonna get a blast of spicy buffalo steam and it can sting your eyes. So it’s best to open the oven door and wait a few seconds for it to dissipate. 
***If you like spicy food, ½ teaspoon of cayenne is a good place to start, but if you can’t handle heat ¼ teaspoon of cayenne will be more your speed. These are spicy!

It appears the nutrition facts are based on one single chickpea? That is a bit misleading and should be specified.

An interesting fusion of buffalo sauce and chickpeas. I never have had chickpeas and I don't know if you can find them in Japan. What other veggies can you marinate with buffalo sauce?
