I love baking, but sometimes I just don't have time. So this Blueberry Mug Cake is a personal favorite. It is so easy to make in a matter of minutes! It also makes a quick treat for my kids, so I try to always keep the ingredients I need to make it on hand.

What ingredients do I need for the mug cake?

For this super fast cake recipe, you will need just 10 ingredients:

  • Ricotta Cheese
  • Butter
  • Vanilla
  • Honey or Maple Syrup
  • Egg
  • Flour
  • Baking Powder
  • Salt
  • Blueberries
  • Powdered Sugar

How do I make the blueberry mug cake?

There are just 5 steps to making this cake and it will take you less than 10 minutes!

Step 1: Whisk together the ricotta cheese, butter, honey or maple syrup (whatever you have on hand), vanilla and egg in a small microwave safe glass bowl or large microwave safe mug.

Step 2: Whisk in the flour, baking powder and salt until combined.

Step 3: Top the cake batter with the blueberries.

Step 4: Microwave on high for 3 minutes.

Step 5: Carefully remove from microwave as outside of bowl or mug will be hot. If you can, remove it with an oven mitt or potholder. Then, dust the top with powdered sugar if desired.

That is all there is to it! A quick and easy dessert in a matter of minutes.

Do I have to use fresh blueberries?

No, you can use frozen blueberries. If you use frozen ones, just stir them into the batter. If you do not have blueberries, raspberries, blackberries or strawberries work well!

Can I make more than one serving at a time?

I do not recommend this as this recipe is meant for single serving. However, since it is so quick and easy, you can make 2 servings back to back.

Ingredients

  • ¼ cup ricotta cheese
  • 2 tablespoons butter melted
  • ½ teaspoon vanilla
  • 3 tablespoons liquid honey or maple syrup
  • 1 egg
  • ¼ cup flour
  • ¼ teaspoon baking powder
  • Pinch of salt
  • cup blueberries
  • Powdered sugar for dusting

Instructions

  • Whisk together the ricotta cheese, butter, honey/syrup, vanilla and egg in a small microwave safe glass bowl or a large microwave safe mug.
  • Whisk in the flour, baking powder, and salt until combined.
  • Top with the blueberries.
  • Microwave on high for 3 minutes.
  • Remove from microwave and dust with powdered sugar. (Be careful as the bowl/mug will be very hot after cooking in the microwave.)
