HOW DO I MAKE CHEESY SHOESTRING CARROT FRIES?
STEP 1: PREPARE THE OVEN AND CARROTS
Preheat the oven to 350 degrees Fahrenheit. In a bowl, toss the carrots with 2 tablespoons of olive oil. Then, spread carrots on a baking sheet.

STEP 2: PREPARE THE CHEESE MIXTURE
In a small bowl, combine shredded parmesan cheese with salt and pepper to taste. Then, sprinkle cheese mixture over the carrots.

STEP 3: BAKE AN ENJOY!
Pop them in the oven and bake for approximately 30-35 minutes, until carrots begin to crisp and cheese starts to brown. Flip the carrots once or twice throughout cooking. Remove and let cool.

ARE THE CARROT FRIES CRISPY OR SOFT?
These homemade cheesy shoestring carrot fries are fairly crispy. The longer they roast, the more crispy they will end up. If you take them out of the oven earlier, they will be much less crunchy.
CAN I ADD ANY OTHER INGREDIENTS TO THE CARROTS?
Yes, if you want to, you can add other ingredients. You could always shred up some sweet potatoes. They cook up at the same rate as the carrots so you should have good results. Another great option would be radishes. Cut them into thin discs or shred them, so they are the same thickness as the carrots. They will taste great with the carrots and seasonings too. Try not to add any veggies that seem to cook a lot longer or way faster. Otherwise, you may end up with part of the ingredients burnt and the other part not cooked all the way.
CAN I ADD OTHER TYPES OF CHEESE?
Yes, if you would like to add other types of cheese, that's more than fine. I love using parmesan because it gets crispy and goes well with the carrots. You could easily swap it for cheddar, Pepper Jack, Colby Jack, or even mozzarella. If you wanted to, you could add a variety of cheeses to change the flavors. If you love spicy foods, Pepper Jack is one of the best flavors!

- ⅓ cup Parmesan cheese - shredded
- Dash of salt & pepper
