Step One: Prepare the Lamb

To get your lamb ready for roasting in the air fryer, start by cutting the potatoes into bite-sized pieces. Then, place the piece of lamb in the air fryer basket, leaving plenty of room around the edges for your side. Toss the potato pieces around the top and sides of the roast in the basket.

Step Two: Season the Dinner

Combine the garlic powder, paprika, oregano, parsley, pepper, and thyme in a small bowl. Spray or brush the roast and potatoes with olive oil, then sprinkle the seasoning mixture over the top of both the meat and potatoes.

  • Continue cooking the vegetables, if needed. While a rare lamb roast may only need 15 minutes to cook, your potatoes might need a little bit longer in the air fryer. After removing the lamb from the basket, transfer it to a cutting board to rest. Then, return the basket to the air fryer to continue cooking the potatoes until they're tender.
  • Allow the lamb to cool before you cut. It's important to account for resting time when preparing a lamb roast. Giving your roast time to rest and cool is essential to getting a juicy, flavorful bite of lamb. That's because cooling allows the juices in your lamb roast to settle into the meat, adding flavor and moisture to each bite.
  • Don't overcook the lamb. While it may be tempting to continue cooking your lamb until it reaches 150 degrees internally to ensure it's fully cooked, heating your lamb past medium isn't recommended. When a lamb roast is overcooked, it becomes dry and tough to eat.

How Do You Store Lamb Roast?
