I love how air fryer recipes can really transform ingredients. A juicy chicken breast coasted in panko bread crumbs and then covered in a sweet and flavorsome marinara sauce. It brings a dish that would usually take a fair bit of time in the oven and manages to put it on the table within minutes. This air fryer chicken parmesan recipe is perfect for busy weeknights and can actually be seen as a healthier way of cooking this classic chicken parmesan. I guarantee this easy dinner will go down a storm with everyone who tries it. So let’s get to it.

Ingredients needed for the Air Fryer Chicken Parmesan

Marinara Sauce

  • 4 large tomatoes
  • ¼ onion
  • 2 garlic cloves
  • 1 teaspoon of salt
  • 1 basil sprig
  • 2 teaspoons Olive oil
  • 1 teaspoon of Italian seasoning
  • ¼ teaspoon of pepper

Chicken

  • 2 large boneless chicken breasts or chicken pieces cut in half (approximately ⅔ lb each chicken breast)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon of Pepper
  • 2 eggs
  • ¼ cup of milk
  • ¾ cup of Bread crumbs
  • 1/4 cup of Panko (Optional: You can use 1 cup of bread crumbs or Panko in total. No need to combine)
  • 1/3 c. freshly grated Parmesan
  • Marinara Sauce
  • 1 cup of Mozzarella Cheese
  • Chopped parsley for garnish

How to make the Air Fryer Chicken Parmesan

Now that you have got all of the ingredients together it is time to make the dish. 

Homemade Marinara Sauce:

  1. Let’s start by preparing the marinara sauce. In a medium saucepan, boil the tomatoes. Make sure that the tomatoes are covered with water. This will take around 10 minutes or until you notice the skin has torn apart. 
  2. Once the tomatoes are ready, you will need to save 1/2 cup of the water used to boil them. You can discard the rest. 
  3. Peel the tomatoes and dice three of them.  
  4. In a blender, place the whole one together with the ½ cup of water to make tomato puree. 
  5. Heat a large saucepan. Once warm, add in the oil and wait until it is hot. 
  6. Add in the onion and garlic. and cook for 3 – 4 minutes or until they are slightly brown. You will need to stir the onions and garlic frequently so they cook evenly. 
  7. Add in the tomatoes, pepper, herbs,  tomato puree, and a fresh basil sprig.
  8. Let it simmer on low heat for 5  – 7 minutes until it thickens. Remove the basil sprig.
  9. Now, remove the marinara sauce from the heat and set aside.

Air Fryer Parmesan Chicken:

  1. Carefully butterfly your chicken breasts so you have 4 pieces instead of 2 thick chicken breasts. This helps to cook the chicken quickly.
  2. Season both sides with salt and pepper. 
  3. In a small bowl mix the milk with the eggs. Make sure you mix well to combine the ingredients.  
  4. In another bowl, mix your bread crumbs, panko (if using), and Parmesan cheese. Mix until combined. 
  5. Working with one piece of chicken at a time, place in the wet ingredients bowl and cover in the egg mixture. Once evenly coated, transfer onto your breadcrumb plate. 
  6. Press the chicken breast onto your bread crumbs and make sure both sides are evenly coated. 
  7. Now preheat your air fryer and spray some non-stick cooking spray onto your basket. 
  8. You will have to work in batches if they don’t all fit on a single layer. Place your chicken onto your air fryer basket and cook at 400 degrees for 6 minutes on each side or if you use a thermometer until it reaches at least 165 degrees on the thickest part of the chicken. 
  9. Once they are cooked, add a bit of sauce to each chicken breast and sprinkle some mozzarella cheese on top. Place the chicken back into your air fryer for 1 – 2 minutes,  until your cheese is completely melted. 
  10. Garnish with diced parsley if you’d like and serve immediately.
