Preheat the oven to 400 degrees Fahrenheit. Keep the garlic bulbs whole and cut ½ inch off the top of the garlic bulb so the cloves are exposed. Place the garlic bulbs on aluminum foil and drizzle the olive oil on the exposed garlic cloves. Then,tightly wrap the aluminum foil around the garlic.
Step 2: Roast the garlic
Place the foil wrapped garlic bulbs in the oven directly on the center oven rack and bake for 40 minutes, or until the garlic cloves are lightly golden brown. Check them and make sure they feel soft when squeezed to make sure they are done. Larger garlic bulbs may take a little more time.
Step 3: Cool the garlic
Remove from the oven and allow the garlic to cool for at least 20 minutes. This is essential before adding it to the cutting board, so it does not melt the butter.
