How to Make Sweet Potato Rounds
This sweet potato recipe is so simple to make. There are just 3 step needed to prepare this appetizer or side dish.
Step 1: Prepare the Sweet Potatoes
Start off by placing rack in center of oven and preheat to 350 degrees Fahrenheit. Then, peel sweet potatoes and cut into 1/2 inch thick rounds and place on parchment lined baking sheet. Drizzle with olive oil.
Step 2: Bake Sweet Potatoes in Oven
Place baking sheet in the oven on the center rack. Bake for 20 minutes or until sweet potato rounds start to lightly brown. Remove from oven and allow to cool for 10 minutes.
Step 3: Garnish Sweet Potato Rounds and Serve!
After sweet potatoes have cooled, top with a spoonful of plain Greek yogurt or sour cream. Sprinkle with bacon bits and top with fresh rosemary. Serve immediately and enjoy!
How do I store the Sweet Potatoes?
The sweet potato chips are best eaten immediately. However, if you do need to store them, do not add any of the toppings. Allow the sweet potatoes to cool after removing them from the oven, Store them in single layers divided with wax or parchment paper in a covered container in the refrigerator. Top them with the Greek yogurt, bacon bits and rosemary right before serving them.
Can I add other toppings?
Absolutely, get creative and try different things on top! Some other topping ideas include: drizzle with honey or sprinkle with cheese and nuts. Of course, they are also very tasty without any toppings at all!
