Ingredients

  • 2 sweet potatos medium sized
  • 2 tablespoon olive oil
  • ½ cup plain Greek yogurt or sour cream
  • ¼ cup bacon bits
  • rosemary fresh

Instructions

  • Place rack in center of the oven and preheat oven to 350 F.
  • Peel sweet potatoes and cut into ½ inch thick rounds.
  • Place on a baking sheet lined with parchment paper.
  • Place in the oven and bake at 350 F for 20 minutes or until lightly browned.
  • Remove from oven and allow to cool for 10 minutes.
  • Top each sweet potato round with a spoonful of yogurt or sour cream. Sprinkle with bacon bits and top with fresh rosemary.
