Ingredients

sweet potatos
medium sized

tablespoon
olive oil

cup
plain Greek yogurt
or sour cream
¼
cup
bacon bits
rosemary
fresh
Instructions
Place rack in center of the oven and preheat oven to 350 F.
Peel sweet potatoes and cut into ½ inch thick rounds.
Place on a baking sheet lined with parchment paper.
Place in the oven and bake at 350 F for 20 minutes or until lightly browned.
Remove from oven and allow to cool for 10 minutes.
Top each sweet potato round with a spoonful of yogurt or sour cream. Sprinkle with bacon bits and top with fresh rosemary.
