Happy Monday, I hope you had a great weekend! We did our annual family weekend trip to Sugarloaf to enjoy some skiing. Unfortunately, it was bitter cold and so ridiculously windy that almost the entire mountain was closed for skiing on Saturday. However, the kids still got in a lot of time on the slopes and seemed not to mind the brutal conditions. We got home late yesterday and I have been feeling pretty run down. So, I decided to check out what was in the fridge and whip up something fresh and healthy to give my immune system a boost. In honor of Valentine’s Day this week, I decided I should use one of my most beloved root veggies in my dish. Check out this Red Velvet Beet Smoothie Bowl recipe made with lots of L-O-V-E!!!
Health Benefits of Beets
Before I share the lovely Red Velvet Beet Smoothie Bowl recipe, I want to point out why this beautiful vegetable is such a nutritional powerhouse. I do absolutely love beets for their flavor, but they have a number of powerful health benefits. They are packed with the vitamins A, C, E, K, B6, B12, Folate, & Riboflavin. Beets also have high concentrations of the minerals calcium, iron, magnesium, phosphorus, potassium, sodium, zinc, copper, manganese and selenium. Wow, that is a lot of good stuff packed into one pretty red veggie! Since these beloved root vegetables and their greens are filled with vitamins and minerals, they can help boost the immune system, which may ward off sickness. They have also become very popular with endurance athletes as they are high in nitrates which has been related to increased stamina.
Red Velvet Beet Smoothie Bowl
I decided to grab what I had in the pantry and fridge to whip up this smoothie bowl. So, I added spinach, banana, strawberries, blackberries, cherries, and almond milk yogurt along with roasted beets. I topped it off with some sweetness from dark chocolate chips, bananas and shredded coconut. I love a good sweet-n-salty combo, so I put some pistachios on top and for Valentine’s Day fun, I cut out some heart shaped salted beet slices too!
- 2 Roasted Beets
- 1 Cup Baby Spinach
- 1 Cup Almond Milk Yogurt (for vegans) or any kind of plain yogurt
- 1/2 banana
- 3/4 cup cherries, pitted,
- 1 cup strawberries with stems
- 1/2 cup blackberries
- Banana Slices
- Beet Slices
- Or whatever your palate enjoys!
- Add all ingredients to blender and blend until smooth
- Then, add toppings of your choice!
