Fall is finally here in Maine and I am really enjoying the cooler weather. During this time of year, I love to bake with apples and pumpkin and make things like my Cranberry Pumpkin Bread or Apple Pizza.

On busy days, I still enjoy baking, but I do take shortcuts, like in this Apple Pie Egg Roll recipe. Instead of using fresh apples, I use apple pie filling to save time. This dessert is so quick and easy to prepare and it makes the perfect after dinner dessert when time is limited!

Step 1: Prepare the Apple Pie Egg Rolls

Start off by preheating the oven to 425 degrees. Grease a baking sheet with nonstick cooking spray and set aside.

Turn the egg roll wrapper sideways, with one corner pointing down. Place a small amount of apple pie filling in the center of each egg roll wrapper. Pull the bottom corner of the wrapper over the top of the apple pie filling. Fold in each side corner toward the center of the wrapper.

Wet a finger with water and rub it on the top corner, then fold it over to seal. Place each egg roll on the prepared baking sheet, then brush the tops of the egg rolls with vegetable oil.
