It was bitter cold here in Maine this weekend and the long winter is starting to really set in. I decided to cure my winter blues by doing a little baking on Sunday morning. Getting out of my pajamas to go to the store was not an option! So, I scoured the pantry to see what was there. I had the baking essentials: flour, baking powder, baking soda, etc. Then, I checked the refrigerator and noticed I had some buttermilk left over from a previous recipe. I also had a pint of fresh blueberries that needed to be used up. So, of course I had to make some delicious Homemade Blueberry Buttermilk Muffins with the ingredients! They were super easy to make and a big hit with the family.

How do I make the Buttermilk Blueberry Muffins?

These muffins are very easy to make. Start out by preheating the oven to 400 degrees and placing liners in a muffin tin. Then, in a small bowl, mx together the rolled oats and buttermilk. Let this mixture stand for 10 minutes.

Next, add the egg and melted butter to the oat mixture.

In a large mixing bowl, combine the flour, baking powder, baking soda, salt and brown sugar.

Then, add the oat mixture to the dry ingredients and stir until ingredients are combined. Gently fold blueberries into this mixture.

Spoon the batter into the prepared muffin tin filling the liners until they are ¾ full.

Place in oven and bake at 400 degrees for 20 to 25 minutes or until muffins are lightly browned around the edges. Cool on a wire rack, then enjoy!

  1. you had me at blueberry! I love grabbing a muffing while running late in the mornings, but this would be ideal to make it from home instead of buying in bulk at costco.
  2. I love blueberries, buttermilk, and muffins so these sound amazing! I have everything at home except the fresh blueberries. There are some frozen ones in the freezer, though, so I may try it with those. I can see this being our "big breakfast Sunday" meal this weekend!
