Spring has finally arrived here in Maine! At this time of year, I enjoy light and fresh flavors like blueberry and lemon. This morning I was in the mood to do a little baking. At first, I was going to make my Homemade Blueberry Buttermilk Muffins or my Lemon Shortbread Square recipe.  Then, I remembered that I had this easy lemon blueberry scone recipe, which had the combination of my 2 favorite springtime flavors! So, the kids and I whipped up a batch of these delicious homemade scones!

What ingredients do I need for the lemon blueberry scones?

There are just 10 ingredients needed for the lemon blueberry scone recipe. You will need:

Flour, butter milk, lemon zest, lemon juice, lemon halves, egg and sugar on marble background.

How do I make the lemon blueberry scones?

There are just a few steps to making these delicious baked breakfast treats.

Step 1: Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside. 

Step 2: Whisk together the flour, sugar, baking powder and salt in a large bowl.

Step 3: Mix together the butter, egg, buttermilk, lemon juice and lemon zest in a medium bowl.

Step 4: Add the butter milk mixture to the flour mixture and stir until just combined.

Step 5: Fold in the blueberries.

Step 6: Drop by heaping spoonfuls onto the prepared baking sheet. Sprinkle with coarse sugar if desired.

Step 7: Bake for 30-35 minutes or until the tops are golden brown. Remove from pan and allow to cool for 10 minutes on a wire rack before serving.

I don't have blueberries, can I use something else?

Yes, absolutely! Some of the other fruits that I have tried in this recipe are: raspberries, strawberries and blackberries. The recipe is quite versatile.

Ingredients

  • 2 cups flour
  • ½ cup sugar
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup melted butter
  • 1 large egg

  15. Thank you for the feedback, I will have to test it again to see if there is something missing or I need to change up the ingredients. They are supposed to be thin, but not like pancakes. Sorry you did not enjoy them.
