Easy Lemon Blueberry Scones

Ingredients

  • 2 cups flour
  • ½ cup sugar
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup melted butter
  • 1 large egg
  • 1 cup buttermilk
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 cup blueberries
  • Coarse sugar for decorating if desired

Instructions

  • Line a baking sheet with parchment paper. Set aside.
  • Preheat oven to 350F.
  • In a large bowl whisk together the flour, sugar, baking powder and salt.
  • In a medium bowl mix together the butter, egg, buttermilk, lemon juice and lemon zest.
  • Add the butter milk mixture to the flour mixture and stir until just combined.
  • Fold in the blueberries.
  • Drop by spoonfuls onto the prepared baking sheet.
  • Sprinkle with coarse sugar if desired.
  • Bake for 30-35 minutes, until tops are golden brown.
