Zest of 1 lemon
Juice of 1 lemon

blueberries
Coarse sugar for decorating if desired
Instructions
Line a baking sheet with parchment paper. Set aside.
Preheat oven to 350F.
In a large bowl whisk together the flour, sugar, baking powder and salt.
In a medium bowl mix together the butter, egg, buttermilk, lemon juice and lemon zest.
Add the butter milk mixture to the flour mixture and stir until just combined.
Fold in the blueberries.
Drop by spoonfuls onto the prepared baking sheet.
Sprinkle with coarse sugar if desired.
Bake for 30-35 minutes, until tops are golden brown.
