Easy Bake Breakfast Bars

If you are getting bored of your overnight oats, you need to try these breakfast bars! Breakfast bars from the store are usually pretty loaded with sugar. And the great thing about these breakfast bars is that they do come with a little bit of sweetness, but these breakfast bars will make life easier for you, especially when you need to eat breakfast quickly or on-the-go, and they last all week.

 

These bars are a lifesaver. If you are looking for a no-fuss breakfast bar that you can stock in the fridge overnight these are perfect. And even if you have a broken fridge or need to repair it yourself, these bars will keep as long as you put them in a tightly sealed Tupperware box. Packed full of protein, healthy fats, and an infinitely healthier version of the common breakfast bar we can get in the store, it will give you a big boost!

Ingredients

  • 9 ounces of Medjool dates
  • 2 teaspoons of cinnamon
  • 2/3 cup of goji berries or dried cranberries
  • 1/2 cup of shelled pumpkin seeds
  • 1 cup of brown flaxseeds
  • 1/2 cup of cacao nibs 
  • 3 tablespoons of chia seeds
  • 1 cup of cornflakes (gluten-free or normal)
  • 1 cup of rolled oats (gluten-free or normal)

Instructions

  • Preheat the oven to 350F degrees. Line the bottom and sides of an 8-inch square baking pan with aluminum foil. If you don’t have foil, parchment paper will be just fine.
  • Pit the dates and tear with your fingers into a saucepan. 
  • Add cinnamon, cover with a cup of cold water, and bring to the boil 
  • After it has bubbled for 5 minutes, turn the heat off, and make a rough purée by beating the mixture with a fork.
  • Put remaining ingredients into a large bowl. 
  • Add the date mixture and mix everything together.
  • Scrape the mixture into the tin, press it all down evenly.
  • Bake in the oven for 30 minutes. Make sure the mixture is firm and set.
  • Remove from the oven. Place the pan on a wire rack, giving the bars time to cool in the baking pan.
  • Cut the hardened mixture into pieces.

And that is it! If you want to make some changes, you can remove the corn flakes and use buckwheat flakes or puffed rice. Instead of flax seeds, you can use sunflower seeds or chia seeds. And if you cannot get a hold of Medjool dates, dried dates will be absolutely fine. But they will take a bit longer to mash into a purée. Just add another cup of water. 

The great thing with making your own breakfast bars that you can gradually play with the flavors and the textures until it’s something that suits you and everybody at home.
