Easy Bake Breakfast Bars

Ingredients

  • 9 ounces of Medjool dates
  • 2 teaspoons of cinnamon
  • cup of goji berries or dried cranberries
  • ½ cup of shelled pumpkin seeds
  • 1 cup of brown flaxseeds
  • ½ cup of cacao nibs
  • 3 tablespoons of chia seeds
  • 1 cup corn flakes
  • 1 cup rolled oats

Instructions

  • Preheat the oven to 350F degrees. Line the bottom and sides of an 8-inch square baking pan with aluminum foil. If you don’t have foil, parchment paper will be just fine.
  • Pit the dates and tear with your fingers into a saucepan.
  • Add cinnamon, cover with a cup of cold water, and bring to the boil
  • After it has bubbled for 5 minutes, turn the heat off, and make a rough purée by beating the mixture with a fork.
  • Put remaining ingredients into a large bowl.
  • Add the date mixture and mix everything together.
  • Scrape the mixture into the tin, press it all down evenly.
  • Bake in the oven for 30 minutes. Make sure the mixture is firm and set.
  • Remove from the oven. Place the pan on a wire rack, giving the bars time to cool in the baking pan.
  • Cut the hardened mixture into pieces.
