Gluten Free Lemon Drop Cookies

What do I need to make the Lemon Flavored Cookies?
This gluten-free cookie recipe is very simple to make! You will need the following ingredients:
- Sugar
- Coconut Oil
- Butter
- Lemon Rind
- Honey
- Lemon Extract
- Egg
- Coconut Flour
- Gluten Free All Purpose Baking Powder
- Salt
- Plain Greek Yogurt
- Lemon Juice
- Powdered Sugar
Kitchen Items Needed:

These drop cookies are quick & easy to make and have a light lemony flavor. I have made them Gluten Free by switching out the regular flour for Coconut Flour & All Purpose Gluten Free Flour. Bob's Red Mill is a great brand to use for both types of flour here!

Also, I used 2 Tablespoons of Coconut Oil in place of 2 Tablespoons of Butter. I love coconut oil and try to sneak it into as many recipes as I can because of the wonderful health benefits it provides. It is important to use a high quality extra virgin coconut oil, such as Nature's Way, when using it in place of butter for baking to achieve similar results.

How do I Make Gluten-Free Lemon Drop Cookies?
This easy drop cookie recipe comes together quickly with just a few simple steps.
Step 1: Make the Cookie Dough
Start off by preheating the oven to 350 degrees Fahrenheit and line baking sheets with parchment paper. In a large bowl, beat together the sugar, butter, coconut oil, butter and lemon rind with an electric mixer. Then, add honey, lemon extract and egg to butter/sugar mixture and beat until well-combined.
In a separate medium-sized bowl, whisk together the coconut flour and gluten free all purpose flour with the baking powder and salt. Add flour mixture alternating with yogurt to butter/sugar mixture and mix until well combined.

Step 2: Drop onto Baking Sheet and Bake Cookies
Drop heaping tablespoonfuls of cookie dough onto parchment lined baking sheet spaced 2 inches apart. Placd on center rack in oven and bake at 350 degrees for 10 to 12 minutes, or until edges are lightly browned. Take out of oven and remove cookies from baking sheet and place on a wire baking rack.

Step 3: Ice the Lemon Drop Cookies and Enjoy!
For the icing, whisk together the powdered sugar and lemon juice in a small bowl. Brush icing on top of warm cookies and sprinkle with bits of lemon rind. Enjoy!

- ¼ teaspoon Salt
- ½ Cup Plain Greek Yogurt
- 1 teaspoon Lemon Juice
For Icing
- 1 Cup Powdered Sugar
- 2 tablespoon Lemon Juice
- 2 teaspoon Lemon Rind grated
