Gluten Free Lemon Drop Cookies

If you are looking for a gluten-free dessert with a lot of flavor, these lemon drop cookies are just the right thing! They are a homemade cookie recipe with lemon icing. They are easy to make and bake in just about ten minutes.

Ingredients

For Icing

  • 1 Cup Powdered Sugar
  • 2 tablespoon Lemon Juice
  • 2 teaspoon Lemon Rind grated

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
  • In a large bowl, beat together the sugar, butter, coconut oil, butter and lemon rind with an electric mixer.
  • Then, add honey, lemon extract and egg to butter/sugar mixture and beat until well-combined.
  • In a separate medium-sized bowl, whisk together the coconut flour and gluten free all purpose flour with the baking powder and salt.
  • Add flour mixture alternating with yogurt to butter/sugar mixture and mix until well combined.
  • Drop heaping tablespoonfuls of cookie dough onto parchment lined baking sheet spaced 2 inches apart. 
  • Place on center rack in oven and bake at 350 degrees for 10 to 12 minutes, or until edges are lightly browned. Take out of oven and remove cookies from baking sheet and place on a wire baking rack.

For Icing:

  • For the icing, whisk together the powdered sugar and lemon juice in a small bowl. Brush icing on top of warm cookies and sprinkle with bits of lemon rind.
