We are just a few weeks into the New Year now, so I have to ask: How are you doing with your resolutions? I hope you are still going strong! I have stayed loyal to my commitment to incorporate more plant-based foods into my diet. It has actually been fun as it has helped me to get a little more creative in the kitchen. I was sick of the same old soup or salad for lunch. So I came up with some unique ideas for Vegetarian Waffle Sandwiches using Van's® Power Grains® and Gluten Free Waffles that I purchased at Hannafords. I love these nutritious and delicious waffles! Vegetarian Chicken Salad Waffle Sandwich

This is my favorite creation! It is made with chickpeas, mayonnaise, Dijon Mustard, lemon juice, tarragon and cherry tomatoes. It comes together in minutes and it is a tasty treat! I use Van's Power Grains Waffles to serve it on because they really help fuel my day. They contain 10 grams of protein and 11 grams of whole grains per serving. The waffles are so flavorful and they are made with nutritious grains like cracked red wheat, steel cut oats, millet and brown rice.Ingredients for Vegetarian Chicken Salad Waffle Sandwich.

How do I make the Vegetarian Chicken Salad?

As I mentioned, it is very simple! First, drain the chickpeas and place them in a medium sized bowl. Then, take a potato masher or a fork and smash the chickpeas. Mashing chickpeas in a glass bowl. Next, add in 2 teaspoons of Dijon Mustard and ⅔ cup of Mayonnaise and stir until semi-smooth. Vegetarian Chicken Salad being mixed together in a glass bowl.Once this is well combined, add a tablespoon of chopped fresh tarragon and juice from half of a lemon. Stir again until well combined. Squeezing fresh lemon juice into chicken salad with tarragon.Gently fold in 2 to 3 diced cherry tomatoes. Salt and pepper to taste if desired. Then, assemble the sandwich on toasted Van's Power Grains Original Waffles. I like to add butter crunch lettuce leaves and slices of heirloom tomatoes to mine! Vegetarian BLTA Waffle Sandwich

The BLTA (bacon, lettuce, tomato and avocado) is my second favorite creation! Once again, this is super easy to make! All you need is vegetarian bacon, lettuce, tomato, avocado, lime, salt and pepper. I use Van's Gluten Free Original Waffles for this delicious sandwich. These light and crispy waffles are made with whole grain brown rice flour and contain 23 grams of whole grains. They are sweetened with fruit juice and are free from dairy, egg, artificial anything, cholesterol, corn and are Non-GMO project verified. Ingredients for vegetarian bacon, lettuce and tomato waffle sandwich.

How do I make the Vegetarian BLTA Waffle Sandwich?

First, slice two avocados in half, remove the pits and scoop them out into a medium bowl. Scooping avocado into a bowl.Squeeze in the juice of one lime. Then, mash the avocados up with a fork until semi-smooth. Mashing up avocado in a white bowl. Add 1 teaspoon of salt and 1 teaspoon of pepper and stir until well combined. Adding salt and pepper to avocado. Toast the Van's Gluten Free Original Waffles. Then, place a ¼ cup avocado mixture onto one. Fresh avocado on a waffle. Next, add the lettuce, tomato and 2 slices of vegetarian bacon. Top with another waffle and enjoy! Van's waffles and vegetarian BLT

Almond Butter, Strawberry, Banana, Chocolate Chip Waffle Sandwich

I originally made this waffle sandwich for the kids, but it is so delicious, that I make it for myself now too! I used Van's Power Grains Chocolate Chip Waffles and simply topped one with almond butter, sliced strawberries and sliced banana. Then, I placed a second waffle on top! It is such a yummy treat when I am craving something with a little sweetness! Van's waffles and strawberries, banana and almond butter waffle sandwich.
