I have been trying to prepare and eat more plant-based meals. In fact, I always have a vegetarian lunch usually in the form of a green salad. However, today I was really craving something with a little more substance. I rummaged through the pantry and found a can of chickpeas and I was trying to decide what to do with them. Then, it hit me…I love the texture of them when I mash them for hummus. I wonder what they would taste like with some mayo and spices? So, within about 10 minutes, I whipped up this vegetarian chicken salad and put it on top of an English muffin. It was the perfect quick and easy lunch!
