Zucchini Fries with Zesty Cilantro Dip

These zucchini fries with zesty cilantro dip are the perfect addition to a meal or make a delicious appetizer!

Happy Monday, I hope you had a great weekend! It was a beautiful weekend here in Maine. The weather was perfect for the Casco Bay Swim Run that I participated in on Sunday. The event was quite an adventure that involved running across 4 islands and swimming between them. So much to say about that experience, but I need to recover a bit first, so that will come later this week!

Besides training for the swim-run event and other races this summer, I am also enjoying gardening! The zucchinis are really taking off and I have been having fun finding different ways to use them in recipes. A recent recipe I made, which was a huge hit, is zucchini fries with zesty cilantro dip. This recipe is very easy to make and it can be served as a side dish or appetizer.

First, preheat the broiler on its highest setting and place your oven rack in the highest position.
Prepare a nonstick baking sheet with cooking oil. Then, rinse the zucchinis and slice them into "steak fries"

Next, whisk the eggs and cream until well mixed, then pour into a shallow bowl. Mix the parmesan cheese and all the spices (onion powder through black pepper) until well combined.
Then, spread the mixture evenly on a large plate. Dip your zucchini slices in the egg wash, I use tongs to roll them around so all sides are coated. Transfer your zucchini slices, one at at time, to the parmesan spice plate and roll the slice until it is well coated.

Transfer the coated zucchini slices to the baking sheet. When all zucchini slices are coated and arranged on the baking sheet, put them under the broiler for 2 to 3 minutes. Then, turn them over with tongs and place back under broiler for an additional 2 to 3 minutes, or until lightly browned.
They will burn if you leave them too long, so watch closely! Remove from oven and serve by themselves or with zesty cilantro dip (see recipe card to make)!
