This fresh and healthy cherry lemonade is quick and easy to make. It is the perfect drink for a hot summer day!
Happy Friday, I hope you had a great week! I’ve had a pretty low key one as I prepare for this weekend’s Odyssey Swim Run race. There has been quite a bit of planning in order to get ready for the event. I am definitely a little nervous, but overall I think it will be fun. Next up after this is IRONMAN Maine 70.3, which is at the end of August. It will mark the end of summer too as the kids will be heading back to school…sigh.
Summer has gone by very fast, but I have made the most of it! I have enjoyed plenty of outdoor time biking and swimming. I have also prepared many of the kid’s favorite “summertime” food and drinks. One thing the kids really love is fresh lemonade, so I have made plenty of that! This week, I decided to add a little twist to the lemonade by adding fresh cherry syrup to it!
Fresh and Healthy Cherry Lemonade
First, add 3 cups of fresh or frozen cherries and 4 cups of water to a medium sauce pan. Place over high heat and bring to a boil.
Then reduce heat to medium and simmer until liquid is reduced by half, which takes about 10 minutes.
Then, strain out the cherries and save the cherry syrup. (The cherries can be used for a smoothie, pie, or discarded.) I really like to use the left over cherries in my Chocolate Covered Cherry Overnight Oats Recipe or Cherry Coconut Muffins.
The rest is pretty simple…Juice two lemons and divide the juice between two serving glass’s. (About 2 Tablespoons lemon juice per glass). Pour two Tablespoons of cherry syrup and one Tablespoon of maple syrup in each glass and stir well.
Add two lemon halves to each glass, along with a handful of ice cubes.Then top each drink with one cup of water and stir. Garnish with additional fresh cherries, if desired, and serve immediately!
