The New Year is almost here! I can't believe how fast 2019 went by. It was a very busy year and truth be told, definitely not my favorite. I am hoping to turn things around in 2020. One thing I would really like to focus on is eating healthier. I am planning to incorporate more plant-based foods into my diet. In fact, I am going to make the month of January my "Veganuary" where I mostly prepare and eat vegan meals. I say "mostly" because I know I will not be perfect, but small steps to a big change.

What is Veganuary?

Initially I thought it was just a catchy term created somewhere out in cyberspace. However, after I did a bit of research, I discovered the real origin of it. Veganuary is a UK based nonprofit organization that started in 2014. It is a crowdfunded campaign that encourages people to eat vegan for the month of January. Participants are able to sign up online for the event and receive helpful tips and information. Veganuary participants have doubled since it's inception in 2014.

  10. Several of these sound absolutely delicious. We aren’t doing a whole month without meat but we are going to try and do meatless Monday’s this year. My husband isn’t amused about it but maybe with some of these breakfast he will be happier about it. Just maybe. Lol
  11. I have never heard of Veganuary, but soooo many of these recipes look so delish! My husband is a HUGE red meat fan through and through, so I've just been trying to get him on board with Meatless Monday and more vegetarian cooking in general (since he does about half the cooking).
