TGIF! It has been a long time since I have counted down the days until the weekend. However, the past two weeks have been crazy busy. The combination of the kids going back to school and peak triathlon training have caused me to get very creative with my schedule!
When things get hectic, I can fall off track with eating well. I skipped lunch twice last week because I was busy. Then, what happened was unhealthy late afternoon snacking...ugh! So, I decided it was time to get back into a good routine this week and make sure to not miss any meals. I jotted down some tips for a quick and easy lunch to share here.
Tips for a Quick and Easy Lunch
MAKE A PLAN
Meal planning at the beginning of the week is key! I used to only plan family dinners. However, I recently started planning out my lunch and it has been a huge time saver. Not to mention, that it has helped me stay on track with eating balanced meals.
MEAL PREP
Once you have you have your lunch menu planned, meal prep can make following it so much easier. I take a block of time on Sunday and prep whatever I can for the week. Chopping up fresh veggies and storing them in containers, so they are ready to go is one of my favorite time saving tips!
MAKE EXTRA
I always make extra food for family dinners. Then, the left overs can be eaten the next day or put in individual containers to freeze for lunch on a busy day in the future.
KEEP IT SIMPLE
There are so many delicious prepared foods available! One of my favorite ways to keep it simple is to keep the freezer stocked with them. I was thrilled to get a box of delicious meals to try from Conagra this week!
Birds Eye Veggie Made™ Chicken Alfredo
I enjoyed the Birds Eye Veggie Made™ Chicken Alfredo on Tuesday for lunch. It was a delicious and nutritious meal. I love that the pasta is made from 100% vegetables too! It was a terrific meal to have after my swim workout.

Evol Cilantro Lime Chicken Burrito
On Wednesday, I had the Evol Cilantro Lime Chicken Burrito for lunch and it was so tasty! The burrito is filled with white meat chicken (raised without antibiotics), black beans, brown rice, cheddar cheese, roasted corn and tomato salsa. I added a little cheese and avocado to the top and it was so yummy and filling.
Healthy Choice Vegetarian Power Bowls Mango Edamame
Yesterday, I refueled with the Healthy Choice Vegetarian Power Bowls Mango Edamame. If you follow me on Instagram or Facebook, you already know I had a monster workout. I did a 6 hour bike ride on my trainer followed by a 45 minute treadmill run. So, needless to say, I was starving afterward! This delicious vegetarian Power Bowl was exactly what I needed. It is a hearty combination of crisp edamame, sweet mango, dried cherries, and sunflower seeds on a bed of whole grains. It makes a great meal after a hard workout as it contains a whopping 10 grams of protein too!
