Happy Friday, I hope you have had a great week! Summer is in full swing here and I have really been enjoying it. In the past week I have even been able to get in the ocean for some swimming training time. I am so surprised at how warm the water is in Maine after the colder than typical spring we had here. I am not complaining, I love it!
Delicious and Healthy Salad Recipes
Another thing I am loving right now are all the local fresh veggies available! Nothing beats a tomato picked out of my garden. I have a small garden, so I also belong to our local CSA (Community Supported Agriculture) program. I really look forward to picking up the share of organic veggies, herbs, and eggs for my family each week. Although, I have to admit, sometimes I have a hard time deciding what to do with it all. I use the vegetables in any way I can, but I do love making fresh salads! I needed some fresh and new ideas though as I was getting a little bored with my recipes. So, I scoured the internet for a bunch of delicious and healthy salad recipes. I included all types of salads from veggie salads to pasta salads and I am looking forward to trying them all!

This is perfect! I've been trying to have more salads lately to eat healthier. The only thing I don't care for is fruit in a salad if it's one with lettuce, too. But veggie salad and pasta salad are such great options for the summer!

I love salads and how they can be made by and into anything. Most think salad is just lettuce and some veggies but I love to make them with all types of meats, fruits, and anything fun we have in the fridge.
