Weeknights can be pretty hectic around my house! However, I do like to always prepare a home cooked meal for my family. I try to find quick and easy recipes that everyone will enjoy. I do spend time at the grocery store looking for helpful meal solutions.

My kids love Thai food. So, when I saw this Blue Elephant Royal Thai Cuisine Yellow Curry Sauce at Walmart I knew I had to give it a try! I had some frozen shrimp in the freezer and a bunch of vegetables in the refrigerator, so I knew exactly what I was going to prepare. I put together this Quick and Easy Thai Shrimp Curry dish in less than 30 minutes and it was a huge hit with the entire family!

What do I need to make the Quick and Easy Thai Shrimp Curry?

There are just 10 ingredients in this quick and easy recipe. You will need:

  • Blue Elephant Royal Thai Cuisine Yellow Curry Sauce
  • Shrimp
  • Jasmine Rice
  • Sesame Oil
  • Red Bell Pepper
  • Green Bell Pepper
  • Carrots
  • Snow Peas
  • Raisins
  • Coconut

How do I make the Thai Shrimp Curry?

As I mentioned above, this recipe could not be easier! There are just a few simple steps to making this delicious Thai recipe.

Step 1: Prepare the ingredients

Start off by removing the shells and deveining the shrimp. I thawed out shrimp that I had in the freezer that were already shelled and deveined. This is quite a time saver!

Cook the rice according to the package instructions. While the rice is cooking, prepare the vegetables by thinly slicing the bell peppers and carrots.

Step 2: Sauté the vegetables

In a medium pan, heat up the sesame oil over medium high heat. Then, add in the vegetables and sauté until tender. This will take about 5 minutes. Remove from heat and set aside.

Step 3: Cook the curry

This is where Blue Elephant Royal Thai Cuisine Yellow Curry Sauce comes into play as an amazing meal solution! All you have to do is add the Blue Elephant Royal Thai Cuisine Yellow Curry Sauce to a large saucepan, add water and bring to a boil. I used 2 packages of the Blue Elephant Royal Thai Cuisine Yellow Curry Sauce because I like to have leftovers for lunch the next day, and this made 6 servings.

Step 4: Add in the shrimp and vegetables

After the Blue Elephant Royal Thai Cuisine Yellow Curry Sauce comes to a boil, reduce the heat to medium. Then, add the shrimp and cook until they are pink, about 3 to 4 minutes. Add the vegetables to the Blue Elephant Royal Thai Cuisine Yellow Curry Sauce and shrimp and cook for an additional minute, then remove from heat.

Step 5: Serve and enjoy!

Serve the Blue Elephant Royal Thai Cuisine Yellow Curry Sauce with shrimp and vegetables over a bed of rice. Garnish with raisins and shredded coconut, if desired.

Ingredients

  • 2 10.6 ounce packages Blue Elephant Royal Thai Cuisine Yellow Curry Sauce
  • 1 1/2 pounds Shrimp shells removed and deveined
  • 1 1/2 cups White Jasmine Rice prepared according to package instructions
  • 1 tbsp Sesame Oil
  • 1/2 cup Red Bell Pepper thinly sliced
  • 1/2 cup Green Bell Pepper thinly sliced
  • 2/3 cup Carrots thinly sliced
  • 2/3 cup Snow Peas
  • 3 tbsp Raisins
  • 3 tbsp Coconut shredded

Instructions

  • Peel and devein shrimp, and rinse with cool water, set aside.
  • Prepare rice accordig to package instructions.
  • While rice is cooking, prepare vegetables by thinly slicing red bell peppers, green bell peppers and carrots.
  • Heat 1 tablespoon of sesame oil in a medium pan over medium high heat and sauté bell peppers, carrots and snow peas until tender, about 5 minutes Remove from heat and set aside.
  • In a large saucepan, add 2 (10.6 ounce) packages of Blue Elephant Royal Thai Cuisine Yellow Curry Sauce and 1 cup of water. Bring to a boil, then reduce to medium heat.Serve
  • Add shrimp to the Blue Elephant Royal Thai Cuisine Yellow Curry Sauce and cook until shrimp are pink, about 3 to 4 minutes.
  • Add sautéed vegetables to the Blue Elephant Royal Thai Cuisine Yellow Curry Sauce and shrimp combo. Cook for 1 more minute and remove from heat
  • Serve Blue Elephant Royal Thai Cuisine Yellow Curry Sauce with shrimp and vegetables over a bed or rice. Garnish with raisins and shredded coconut, if desired
