What do I need to make the Peanut Butter and Jam Cookies?

How do I make the Peanut Butter Cookies?

These cookies are very easy to make with just a few simple steps. Here is what you will need to do:

Step 1: Prepare the Cookie Dough

Start off by preheating the oven to 350F. Line a cookie sheet with parchment paper and set aside.

In a large bowl, with an electric mixer, cream together the white sugar, brown sugar, butter and peanut butter. Add the eggs and vanilla and mix until the mixture is light and fluffy, about 2 minutes on medium. Then, add the flour, baking powder, baking soda and salt and mix until they are completely incorporated.

Step 2: Roll the Peanut Butter Cookie Dough into Balls

Use your hands to roll the dough into balls. Use about 2 tablespoons of dough per ball. Place balls onto parchment lined tray and press your thumb into the centre of the dough ball to make a hole.

 

Step 3: Add Strawberry Jam to cookies

Spoon about a teaspoon of jam into the hole. Make sure to space the jam filled dough balls 2 inches apart on the cookie sheet.

Step 4: Bake, Cool and Enjoy!

Bake on center rack in oven for 16-18 minutes, until the cookies have browned slightly around the edges. Allow the cookies to cool for a couple of minutes on the baking sheet before transferring them to a wire rack to cool completely.

*PRO TIP: I love the look of these cookies with all the cracks and crevices around the edges but if you want your cookies to look a little bit tidier, take care when you are pushing your thumb into the dough to make the hole for the jam that you don't push too far down; this causes the dough to split more. If the dough ball does split on the edges you can pinch them back together and smooth them out with your hands before baking.

Can I make these cookies smaller?

These cookies are quite large. If you would prefer smaller cookies use 1 tablespoon of dough to make the dough balls and bake them for 12-14 minutes.

How do I store the cookies?

They can be stored in an air tight container at room temperature for 5 to 7 days. If you like them warm, simply pop them into the microwave for 5 to 10 seconds and enjoy!
