Peanut Butter and Jam Cookies

  • Preheat oven to 350F. Line a cookie sheet with parchment paper. Set aside.
  • In a large bowl, with an electric mixer, cream together the white sugar, brown sugar, butter and peanut butter.
  • Add the eggs and vanilla and mix until the mixture is light and fluffy, about 2 minutes on medium.
  • Add the flour, baking powder, baking soda and salt and mix until they are completely incorporated.
  • Use your hands to roll the dough into balls. Use about 2 tablespoons of dough per ball.
  • Press your thumb into the center of the dough ball to make a hole.
  • Spoon about a teaspoon of jam into the hole.
  • Place the jam filled dough balls on the prepared cookie sheet about 2 inches apart.
  • Bake for 16-18 minutes, until the cookies have browned slightly around the edges.
  • Allow the cookies to cool for a couple of minutes on the baking sheet before transferring them to a wire rack to cool completely.
