Can I substitute orange juice for milk in a muffin recipe?

Milk can be substituted 1:1 for orange juice in muffin recipes. Both milk and orange juice add moisture, but it may take a little longer for some recipes to bake through if you choose to substitute orange juice for milk.

It's important to note that this recipe doesn't use a ton of orange juice and already includes milk. Therefore, you'll want to replace the exact amount of juice you were going to use with that much extra milk. You don't want to cause your muffins to be too thin or this will cause them to rise and fall improperly.

How do I store and warm the breakfast muffins?

Once cool, these muffins may keep at room temperature for at least five days in an airtight container. You can put them in a refrigerator if you want or keep them on the shelf for a few days longer, if you wish.

You can put all of your leftover muffins in the microwave before eating. The heat is 10-15 seconds long or until the desired temperature is achieved.

Oranges and other citrus fruits are rich in vitamin C and antioxidants, which can help to fight infections and disease. They're also high in fiber, making them a good aid when it comes to healthy digestion.

While oranges are sweet, they're also low on the glycemic index. This means that they produce a slower rise in blood sugar than other foods high in natural sugars, which makes them a good choice for diabetics and those hoping to maintain healthy blood sugar levels.

Notes

Tips
  • Do not open the oven door or you run the risk of ending up with flattened muffins.
  • Do not beat the dough like a cake, which prevents the muffins from rising and makes them heavy.
  • Never fill the muffin molds more than three-quarters full and place them in the center of the oven.
  • Using vegetable oil results in lighter muffins because it prevents gluten formation in the flour. On the other hand, butter adds more fluffiness to the dough.
  • Silicone molds give better results than paper molds, which burn easily.
