I am a sucker for anything that has fresh ingredients. That's one of the biggest reasons why I enjoy eating Mediterranean Tomato Salad so much.  I eat this salad probably once a week all summer long. Sometimes I add it to my meal, and other times I eat it by itself for an easy lunch. 

Using fresh garden tomatoes is the key to making the salad taste it's absolute best. Whenever possible, using tomatoes that you have grown in your garden or something you picked up at a farmer's market gives you the best flavors. Don't worry, it's still a fantastic salad when tomatoes aren't in season too. WHAT DO I NEED TO MAKE MEDITERRANEAN TOMATO SALAD?

For the Salad:

  • Cherry Tomatoes
  • Red Onion
  • Red Bell Pepper
  • Feta Cheese

For the Dressing:

HOW DO I MAKE MEDITERRANEAN TOMATO SALAD?

STEP 1: SLICE AND DICE THE VEGGIES AND FETA CHEESE

Cut 2 ½ cups cherry tomatoes in half. Thinly slice 1 red onion. Remove rib and seeds from red bell pepper, then dice. Cut up Feta cheese into small chunks.

STEP 2: PREPARE THE DRESSING

In a small bowl, whisk together olive oil, sea salt, black pepper, and dill.

STEP 3: ASSEMBLE SALAD AND ENJOY!

Add vegetables and cheese to a salad bowl. Then, add dressing and toss until everything is coated. Serve immediately or refrigerate until ready to enjoy!

WHAT KIND OF NUTRIENTS ARE IN MEDITERRANEAN TOMATO SALAD?

There are lots of reasons to eat this Mediterranean salad, including the fact that it's loaded with healthy nutrients. You will get calcium, iron, potassium, folate, riboflavin, vitamin C, vitamin K, and so much more. Plus, this salad also has lots of antioxidants too. CAN I MAKE THE TOMATO SALAD AHEAD OF TIME?

Yes, of course, you can make the tomato salad ahead of time. Prepare the salad as directed and put it in an airtight container. Keep it refrigerated until you are ready to serve. The salad will last 3-4 days in the fridge. It should never be kept sitting out for longer than 2 hours, or it will start to spoil. 

If you are planning on serving the salad at a potluck or party, it's best to put it on ice. Place it in a bowl and put another bowl underneath of it that's filled with ice. This will keep it cold while it's sitting out.

DO I HAVE TO USE CHERRY TOMATOES?

We love using cherry tomatoes when making the Mediterranean tomato salad, but you could swap them out. Grape tomatoes taste similar and would be a lovely option. You could use other varieties of tomatoes if you want. Plum tomatoes and Sungold tomatoes are both pretty sweet. Roma tomatoes would be a great option as well. If you use a larger tomato, just cut it so it' in bite-sized pieces, and it will be great.

WHAT ELSE CAN I ADD TO THE MEDITERRANEAN SALAD?

Feel free to add any of your favorite ingredients. You really can't go wrong. Here are a few of my favorite variations to use. 

  • Olives - Sometimes, I like to slice some black olives and toss them in the salad. They offer a tangy flavor that compliments the other ingredients. 
  • Greens - Spinach, arugula, and other leafy greens are a fantastic way to add flavor, texture, and stretch the salad even further. 
  • Garlic - Add some minced garlic to the dressing to give it even more pizzazz. 
  • Vegetables - Chop or dice your favorite veggies and add them in. We love to add in cucumbers every once in a while.
