Just follow these simple steps to prepare a delicious soup dinner in your pressure cooker:
Step 1: Sauté the Ground Beef and Veggies
Start by setting the Instant Pot to sauté mode, then add the olive oil to the pot. When the oil is hot, stir in the chopped yellow onion and cook for five minutes. Next, add the garlic to the pot and sauté for an additional minute. Finish by putting the ground beef in the Instant Pot. Cook the meat, stirring often, until it's browned and cooked through. As the meat cooks, use your spoon to break it up into crumbles.

Step 2: Pressure Cook the Soup
When the meat is finished cooking, turn off the Instant Pot and add the beef broth. Stir in the diced tomatoes, crushed tomatoes, and tomato paste. Then, season with Italian seasoning. Stir in the noodles, then place the lid on the Instant Pot and seal the vent. Set the pot to cook on high pressure for eight minutes.

While the soup is cooking, combine the mozzarella cheese, parmesan cheese, and ricotta cheese together in a bowl. Then, add in the basil and garlic powder, salt and pepper to taste. Stir until well combined. When the cook time is up, allow the pressure to naturally release for 10 minutes. Then, do a quick release to remove the pressure from the pot and remove the lid. - Deglaze the pot by running a wooden spoon along the bottom of the pot after you add the beef broth to the pot. This will help remove bits of stuck on onion, garlic, and beef from the pan, which could burn while the soup is cooking.
- Add the broth before the tomatoes to keep the tomatoes from sinking to the bottom of the pot. Tomatoes are likely to stick to the pot as they cook, so it's important to add the broth first, then fill the pot with the remaining ingredients.
- Don't push the noodles to the bottom of the pot after adding them to keep them from sticking. Instead, lightly press the noodles into the liquid, making sure they're submerged just enough to thoroughly cook without getting stuck on the bottom of the pan.

- 2 tablespoon olive oil
- ½ yellow onion diced
- 2 tablespoons garlic minced
- 1 lb ground beef
- 4 cups beef broth
- 1 14.5 ounce can crushed tomatoes
- 1 14.5 ounce can petite diced tomatoes
- 2 ½ tablespoon tomato paste
- 2 tablespoons Italian seasoning
- Salt and black pepper to taste
- 8 lasagna noodles broken into 1” pieces (6.5 oz)
- 1 ¼ cups shredded mozzarella cheese
- ½ cup finely shredded parmesan cheese
- 8 oz ricotta cheese
- 2 tablespoon chopped fresh basil
- 1 teaspoon garlic powder
- salt to taste
- pepper to taste
Instructions
- Set the instant pot to sauté and add the olive oil.
- When olive oil is hot, add the onion and sauté for 5 minutes or until translucent.
- Add the garlic and sauté for 1 minute.
- Add the ground beef and cook until lightly browned, stirring frequently.
- Add the beef broth, crushed tomatoes, petite diced tomatoes, tomato paste Italian seasoning and broken up lasagna noodles. Stir until well combined.
- Close the lid and seal the pressure valve.
- Cook on high pressure for 8 minutes.
- When the time is up, allow pressure to naturally release for 10 minutes. Then, quick release remaining pressure and remove the lid.
- While the soup is cooking, mix the cheeses together until well combined. Then, add in the basil and garlic powder. Salt and pepper to taste and mix again until well combined. Place cheese mixture in refrigerator until the soup is done.
- To serve, place a dollop of cheese mixture in the center of each soup bowl and ladle the lasagna soup on top. Garnish with additional basil and parmesan cheese if desired.
