How Do I Make Instant Pot Lasagna Soup?

Using your Instant Pot is a great way to speed up the cook time of your favorite soup recipe. But just because you prepare lasagna soup in a fraction of the time it would take to cook it on the stovetop doesn’t mean this recipe is lacking in flavor! Just follow these simple steps to prepare a delicious soup dinner in your pressure cooker:

Step 1: Sauté the Ground Beef and Veggies

Start by setting the Instant Pot to sauté mode, then add the olive oil to the pot. When the oil is hot, stir in the chopped yellow onion and cook for five minutes. Next, add the garlic to the pot and sauté for an additional minute. Finish by putting the ground beef in the Instant Pot. Cook the meat, stirring often, until it’s browned and cooked through. As the meat cooks, use your spoon to break it up into crumbles.

Step 2: Pressure Cook the Soup

When the meat is finished cooking, turn off the Instant Pot and add the beef broth. Stir in the diced tomatoes, crushed tomatoes, and tomato paste. Then, season with Italian seasoning. Stir in the noodles, then place the lid on the Instant Pot and seal the vent. Set the pot to cook on high pressure for eight minutes.

Step 3: Add the Cheese

While the soup is cooking, combine the mozzarella cheese, parmesan cheese, and ricotta cheese together in a bowl. Then, add in the basil and garlic powder, salt and pepper to taste. Stir until well combined. When the cook time is up, allow the pressure to naturally release for 10 minutes. Then, do a quick release to remove the pressure from the pot and remove the lid. Stir to mix the soup. Add a dollop of the cheese mixture to the center of each soup bowl. Then, ladle the lasagna soup on top of the cheese.  Top with additional Parmesan cheese and basil if desired.

Instant Pot Lasagna Soup Tips & Tricks

You won’t believe how easy it is to make lasagna soup in your Instant Pot! And with these cooking tips, you can whip up this hearty soup for your family in no time.

Avoid the burn warning: If you’ve ever heard that annoying beeping sound come from your Instant Pot in the middle of a recipe, you know how much of an inconvenience a burn warning can be! Luckily, it’s easy to avoid getting a burn warning while cooking this soup recipe with these tips:

  • Deglaze the pot by running a wooden spoon along the bottom of the pot after you add the beef broth to the pot. This will help remove bits of stuck on onion, garlic, and beef from the pan, which could burn while the soup is cooking.
  • Add the broth before the tomatoes to keep the tomatoes from sinking to the bottom of the pot. Tomatoes are likely to stick to the pot as they cook, so it’s important to add the broth first, then fill the pot with the remaining ingredients.
  • Don’t push the noodles to the bottom of the pot after adding them to keep them from sticking. Instead, lightly press the noodles into the liquid, making sure they’re submerged just enough to thoroughly cook without getting stuck on the bottom of the pan.

Add more veggies: You can make this soup even healthier by mixing in a few more veggies before cooking it in your Instant Pot. Sauté some chopped bell pepper with the onions or stir a handful of baby spinach leaves into the pot with the lasagna noodles.

Try different meat: Instead of ground beef, you can also use ground turkey or ground pork in this easy recipe to lighten it up. Simply replace the ground beef with the same amount of ground turkey or pork and follow the recipe instructions as written.

Make it vegetarian: You can also skip the meat altogether! To make this a vegetarian recipe, simply leave out the ground beef and cook the recipe as written.
