How Do I Make Instant Pot Chicken Enchilada Soup?

You’re going to love how quick and easy it is to make your favorite Chili’s soup recipe at home! With the help of your Instant Pot, this dump and go recipe is perfect for a quick weeknight meal. Just follow these simple instructions for making chicken enchilada soup in your Instant Pot:

Step One: Cook the Onions

Before you can start cooking your soup in the Instant Pot, it’s a good idea to take a minute to saute your onions to enhance their flavor. Start by setting the pot to saute mode. Once it’s hot, add the oil to the pot and stir in the diced onions. Continue cooking the onions for five to eight minutes, until they’re fragrant and translucent.

Step Two: Add the Soup Ingredients

Once the onions are finished cooking, turn off the Instant Pot and add the water and powdered bouillon. Stir to mix the ingredients until no more lumps appear. Then, add the whole chicken breast and spices.

Step Three: Pressure Cook the Chicken

Place the lid on the Instant Pot and seal the vent. Set the pot to cook on high pressure for eight minutes, then do a quick release to remove the pressure from the pot.

Step Four: Add the Cheese

Once all the pressure has been removed from the pot, remove the lid and take out the chicken. Allow it to cool slightly, then shred it with a fork and set it aside. Next, set the pot to saute mode and add the enchilada sauce and melting cheese. Continue stirring until the cheese is melted.

Step Five: Thicken the Soup

After the Velveeta cheese is fully melted, add the masa harina to the pot and stir to combine. The soup will continue to thick as it simmers, so keep stirring to mix all the ingredients together. Once the soup is thick, turn off the Instant Pot and stir in the shredded chicken before serving.

How Do I Thicken Instant Pot Soup?

Since an Instant Pot pressure cooks the ingredients in your soup, it can be difficult to prepare thick and creamy soup with this appliance. Luckily, there are a few steps you can take to help your soup thicken before you serve it.

  • Saute the soup. While pressure cooking the soup probably won’t thicken it, setting the Instant Pot to saute mode could hep the ingredients thicken. Switch the pot from Pressure Cooking to Saute and allow the ingredients to simmer for a few minutes to help thicken everything.
  • Add some cheese. Another easy way to help thicken the base of your soup is with the help of cheese. After pressure cooking the soup ingredients, set the pot to Saute mode and mix your favorite cheese. Velveeta is a great option for creating a thick and creamy soup in the Instant Pot.
  • Add some cream. Heavy cream is a great way to thicken your chicken enchilada soup and tone down the spice from the other ingredients. If you’re looking for a creamy, thick soup, a cup of heavy cream is the perfect option for adding texture and smoothness to your Instant Pot recipe.
  • Mix in a thickening agent. If all else fails, adding a thickening agent is a great idea. This recipe use masa harina to help thicken the soup and give it more flavor. If you don’t have any on hand, you could also use a slurry of equal parts cornstarch and water. Simply stir in the thickening agent and allow the mixture to simmer on Saute mode until the broth has thickened.

Can You Make Chicken Enchilada Soup with Frozen Chicken?

Using fresh chicken breast is the best option for preparing your Instant Pot soup. But if you forgot to thaw you chicken for dinner, don’t worry! You can also cook this recipe using frozen chicken breast. You’ll just need to increase the cook time slightly to ensure your chicken is fully cooked.

After adding the frozen chicken to the pot with your cooked onions, water, and bouillon, set the pot to cook on high pressure for 12 minutes. When the cook time is up, you can do a quick release to remove the pressure from the pot. After that, continue following the recipe as written.

This was delicious. I had cooked chicken already, so I made it on the stove. I also added a small can of diced tomatoes during the simmering time. I’ve tried 3 different recipes and this is the closest to Chilis!
