How do I make Healthy Almond Butter?

This almond butter recipe comes together in less than thirty minutes and in two simple steps. Here is what you will need to prepare this healthy butter recipe.

Step 1: Roast the almonds

Start off by preheating the oven to 375 degrees Fahrenheit. Coat a baking sheet with cooking spray or line with parchment paper. Place the almonds on a baking sheet and drizzle the vanilla on top. Then, sprinkle on the cinnamon. Turn them over until they are evenly mixed.

Place in the oven on the center rack and roast for 10 minutes, stir once halfway through roasting time. Remove from the oven and let the almonds cool completely to room temperature.

Step 2: Blend Almonds until butter is formed

Then, transfer the almonds to a blender or food processor and blend medium speed until almonds are pulverized. Start off by adding 2 tablespoons of olive oil and 1 to 2 tablespoons of honey, depending on how sweet you would like the almond butter to be.

Pro Tip: If you are using a Vitamix, make sure you remove the cap on the lid and use the tamper to push the almonds into the blade while it’s blending. If you are using a regular blender or food processor, remove the lid and scrape down the sides and blend again.

Blend again on medium speed. The almonds will begin to change consistency throughout the process before they become smooth and creamy. If the almond butter is too thick, slowly add in more olive oil and blend until desired consistency is reached. Once it has become a creamy almond butter, transfer it to a Mason jar or other airtight container and store in the refrigerator.

What is the best way to store the almond butter?

It can be stored in the refrigerator in a covered air tight container. I prefer using a glass jar, such as a Mason Jar. The homemade almond butter is good for 2 weeks when stored properly in the refrigerator. It will need to be stirred well before each use.

How do I serve the butter?

Honestly, I love sprinkle a little salt on it and eating it by the spoonful! Other delicious ways to enjoy it are with apple and banana slices. It makes a great topping for toast, rice cakes or crackers too.
