I love the summer months here in Maine! One of my favorite things to do is go berry picking. There are some great places farms to go to for picking strawberries. For blueberries, blackberries and raspberries, I simply head out to my backyard to pick them. It's quite a treat to enjoy locally grown fresh fruit all summer. I have at least a dozen different recipes I like to include the berries in from pies to homemade ice cream. However, when I am looking for a simple way to enjoy them, I whip up this quick and easy Fruit Salad with Raspberry Sauce.

What do I need to make the fruit salad?
There are just nine ingredients needed to make this berry fruit salad and raspberry dressing. Here is what you will need.

How do I make the Fresh Fruit Salad with Raspberry Sauce?
This is such a simple recipe, but it is packed with fresh, sweet flavor and nutrients. Here is what you will need to do to make the salad.
Step 1: Prepare the fruit
Start off by preparing all the fruit. Peel the apricots or peaches and thinly slice them. Next, rinse the fresh strawberries with cold water and remove stems. Slice in half or quarters, depending on the size of the strawberries. Prepare fresh raspberries, fresh blueberries and fresh blackberries by placing them in a stainer and rinsing them with cold , then pat dry with paper towels. Cut pineapple into small pieces or chunks. Peel the kiwi fruit, then slice it. Add all fresh berries and other fruit to a large bowl. Gently toss the fruit to combine.
Step 2: Make the Raspberry Dressing
Pour the maple syrup into a small bowl. Add 4 raspberries and mash them up with the back of a spoon or fork. Juice one lemon, remove seeds and whisk into maple syrup and raspberry mixture to create a sauce that has a beautiful color! Pour the sauce over the fruit salad and gently mix until fruit is coated. Chill for at least 30 minutes to allow fruit to marinate in sauce. Before serving toss again.

This is the perfect summer salad to serve all by itself. However, there are at least a dozen other ways to enjoy this healthy recipe. Here are three of my favorite ways to serve it!
Add it to Shortcake: I love putting a big scoop of the fruit salad on top of either homemade shortcake or store-bought shortbread to create a delicious dessert. Top it with whipped cream if you want something extra decadent!
Create a Fruit and Spinach Salad: Place two or three cups of baby spinach on a plate, then add about ¾ cup of the fruit salad. Then, sprinkle with a little feta cheese of goat cheese and add some chopped nuts. Toss it gently for a delicious lunch salad. No need to add dressing as the fruit with raspberry sauce will serve as a fabulous homemade dressing!
Top Ice Cream with it: This makes a healthy topping to vanilla, chocolate or strawberry ice cream or frozen yogurt.

What is the best way to store the fruit salad with raspberry dressing?
It should be stored in an airtight container in the refrigerator. It will last for 3 to 5 days if stored properly.
Can I add other fruit to the salad?
Yes, absolutely! Some other great additions would be pitted, chopped cherries, red or green grapes and small pieces of apples. There are a few fruits that I would avoid in the salad, like bananas, as they tend to turn brown and get mushy if stored. Watermelon, cantaloupe or honey dew may also not be a good choices as the melon flavors tend to overpower the flavor of the berries.

For Fruit Salad:
